When delicious mix of mango and vanilla flavors combined together to make 6 ingredient, eggless, easy to make Mango Vanilla Custard Popsicles Recipe|Mango Popsicles, it turns out to be fun summer treat.

A kid friendly recipe which is made with few basic ingredients available in every kitchen.

It turns out juicy and has mango and vanilla custard flavor with a twist of white chocolate (secret ingredient) and dry cranberries.

Popsicle are known by many different names, like ice pops, ice dollies or ice lollies. Well, we used to call it mango dolly/kulfi and ice cream on a stick reminds me of beautiful childhood memories!

In addition to that, when you can see nothing but mangoes around you, you are tempted to try more and more recipes.

After making 4 ingredient mango frooti recipe from Alphonso mangoes, I was just going through my blog and wondering why I haven’t shared popsicle/candy recipes other than Aam panna popsicles, Imli ki kulfi and Green tea chocolatey candies.

So I decided to make these fun popsicles using mangoes this time. Usually, the popsicles are made just with fruit pulp/extract, but i wanted to look them more colourful and attractive at the same time.

 

The wonderful combination of Mango Vanilla Custard Popsicles | Mango popsicles

This idea to combine mango and vanilla originated from Vanilla Custard with mixed fruits recipe.

Here in vanilla custard mango or any fruit really tastes amazing. Moreover in Mango china grass pudding, mango really pairs well with pudding too.

After surfing through various recipes, I found that popsicles are generally made using fruit pulp and cornstarch/corn flour, so the idea clicked to use Vanilla custard powder to make these popsicles from there.

In addition to that, I wanted mango puree to have some binding agent, so while searching, got a nice idea to use white chocolate along with mango from here.

 

Tips to make perfect Mango Popsicles

First and foremost, i would suggest  using sweet, juicy and ripe mangoes for this recipe. Alphonso works the best. You could choose Neelam, Badam, Kesar or any other variety also.

You can use market bought mango puree that is easily available in stores. Or can use canned puree.

Adjust the sweetness according to your taste and preference.

Add melted white chocolate to the mango pulp. It adds a rich flavor to the mango pulp and helps popsicles to freeze well.

Using dried cranberries is purely optional. You may omit this.

Step by step instructions and pictorial presentation on how to make Mango vanilla Custard popsicles

 

To make Vanilla custard

In a thick bottom pan bring milk to a boil, reduce the flame.

Meanwhile, mix custard powder in 2 spoons of cold milk or cooled down milk, mix thoroughly.

Pour this into boiling milk and
keep stirring continuously until the milk is thick and creamy.

Before switching off the flame, add sugar and keep stirring constantly so that no lumps are formed and it should not stick to the bottom of the pan.

Once sugar is dissolved completely, remove the pan from the stove and sprinkle some sugar on top of custard so that thick layer is not formed on top of custard.

Let this custard cool down completely.

 

To make Mango-white chocolate layer

Temper the while chocolate using double boiler method. Mix nicely with a spoon and let it cool for a while.

Meanwhile mix sugar in the mango puree. To this add melted white chocolate. Keep it aside.

 

Mango popsicles in molds

 

Now to make popsicles, fill the popsicle molds first with vanilla custard till one fourth. Freeze it for 10 minutes.

Remove and fill the remaining with mango chocolate mix. Add some dried cranberries.

Return these popsicles into the freezer again. After an hour insert wooden stick in the centre and let them rest overnight or for at least 8 hours.

I have made these 2 ways by layering. In popsicle molds, first add 2 tbsp of vanilla custard, after that 2 tbsp of mango chocolate mix and so on till the top.

Set this in the freezer for an hour, insert the wooden stick and set it for 8 hours minimum or overnight.

 

To remove the popsicles from the molds

Fill a wide bowl with water. Dip the popsicles in it for few seconds.

Gently pull it out and serve immediately.

Ingredients

1 Cup = 250 ml

  • 1/2 litre Milk
  • 2 +1/2 tbsp Vanilla custard powder
  • 2 cups Mango Puree
  • 1/4 cup Sugar less or more
  • 1/2 cup White chocolate chips
  • 1/8 cup Cranberries dry

    I just read mango dolly and it brought a flood of memories. Remember enjoying the Vadilal mango dolly when I was in school.
