The freshness of the fruit, burst of flavors, with bright color fruits popping through the jelly makes this cake look very attractive.

Come summers and we all crave for chilled Fruit custard, Fruit Lassi/yogurt cooler or Mango Falooda.

Making this jelly cake was playing on my mind as this is so trending now a days. After making variety of flour based Cake recipes, I so wanted to try this jelly cake at the earliest.

After watching many videos on youtube, I mustered the courage (as it’s bit tricky to set the layers perfect and then to un mold) and made this delicious, beautiful, fun to eat jelly fruit cake.

In case you’re wondering if it’s difficult to ace, not at all!

Step by step instructions and pictorial presentation to make Fruit Jelly cake Recipe | Jelly fruit cake Recipe

 

Making of layer with fruits

Clean, wash and chop around 2 cups of  fruits of your choice, into small pieces. Here I have used Apple – Kiwi – Pear – Pomegranate arils – Dragon fruit – Oranges  and Black grapes.

Keep your mold ready, you could use a 8” cake tin. I used 1 big (8 inch round) and 1 small aluminium tin to make this fruit jelly cake.

 

To make agar agar mixture

Take a cooking pot, add cold water to it.
After that add 1 tbsp agar agar powder, and stir it very well.

Keep it on medium flame and using a whisk, stir continuously till the it comes to a rolling boil and add sugar to this. Cook till sugar dissolves and switch off the flame.

 

 

Next pour 2 ladle full of this agar agar & sugar mix into the base of pan. Randomly spread mix of fruits over it.

Make sure all the fruits are placed strategically so that colours are visible through jelly.

Pour the remaining agar agar mix over fruits and set it aside.

To make Raspberry jelly layer

Follow the instructions written on the pack to make jelly by heating water in a pan and pour the contents of raspberry jelly pack. Stir well to combine.

 

Thereafter pour this jelly slowly and gradually over the layer of fruits. Set this into fridge to chill for about 4 to 5 hours.

To un mold the jelly cake

First of all lightly push the edges of the jelly cake with the side of your palm from all over.

Thereafter, insert 4 toothpicks exactly the height of the pan, at 4 different spots at the sides of the dish.

The reason we do this is to create some air as the jelly gets sucked into the dish with no air, therefore making it difficult to come out of the dish.

So once you’ve inserted the toothpicks, place a plate over it. Now turn it upside down and  slowly and gently transfer the cake onto a plate. Remove the toothpicks.

There you have a beautiful Jelly Fruit Cake ready to be devoured .

 

Notes

1. The variations and combinations for fruits are many, choose whatever is available fresh and seasonal.

2. For jelly layer you can use strawberry, litchi or coconut flavour also.

Ingredients

For agar agar mixture

  • 1 tbsp 8 grams Agar agar powder
  • 1000 ml Water
  • 200 grams Sugar

Fruits used

  • 2 cups mix fruits
  • Apple
  • Kiwi
  • Pear
  • Pomegranate arils
  • Dragon fruit
  • Oranges
  • Black grapes

For Raspberry layer

  • 1 pack Jelly of 90 grams
  • 500 ml Water
