Star fruit Mojito | Star fruit virgin mojito is pretty quick and easy to make, only 6 ingredients, vegan, gluten free, dairy free, and alcohol free summer drink made from Star fruit/Carambola/Kamrakh.
In some parts of the world it’s known as Carambola, and in Hindi it’s called kamrakh.
What is Star fruit
Star fruit or carambola tastes sweet and sour and has the shape of a five point star. According to Healthline the star fruit is a decent source of several nutrients, especially fiber and vitamin C.
The star fruit is yellow/green in color. While choosing the star fruit make sure it’s ripe. A ripe star fruit is yellow in colour with some hint of green. Clean it properly and cut the both ends, slice it and remove the seeds before using it.
Generally star fruit is available all through the year but it flourishes during two times of the year, in January – February, and in September – October. So make the most of it and enjoy making various dishes.

It’s a perfect balance of flavors with bright yellow fruit that is tangy, earthy flavors of lemon grass tea, along with simple sugar syrup, lemon and fresh mint, creates a magical taste.
Step by step instructions and pictorial presentation to make star fruit mojito| star fruit virgin mojito
First of all wash lemongrass well. Heat a pan on stove with 2 glasses of water. Once it starts to boil add lemongrass leaves into in. Next add sugar to this.
Let it simmer for 2 to 3 minutes. Switch off the flame. Your lemongrass tea is ready.
Cool and strain it. Keep aside
Now chop star fruit into pieces. Make puree by blending it into mixer.
In a muddler, put lemon juice and mint. Muddle it 2 to 3 times to release the flavour. But don’t over muddle it as mint may turn bitter and it will spoil the taste of mojito.
To serve :
Coat the rim of the glass with honey, chilli powder and chat masala for that extra kick while sipping this cool mojito.
In 2 tall glasses, add enough ice cubes. Divide mint lemon mixture equally. To this add star fruit puree. Top it up with lemongrass tea. Add salt to taste.
With the help of stirrer, mix everything well. Taste the test and adjust sweetness and serve chilled.

- Lemon - 1

- salt - to taste
