Easy Coleslaw Recipe (Vegan) served alongside dressing and shredded carrots

 

This no-mayonnaise Easy Coleslaw Recipe (Vegan) is made with cabbage, carrots, purple cabbage and finished off with homemade dressing replacing Mayonnaise.

The dressing is made of cashews, garlic cloves, dijon mustard, vinegar, lemon juice, maple syrup and some basic seasonings which is somewhat similar to Vegan crema fresca recipe.

The salad turns out creamy, crunchy, delicious, sweet and tangy without using Mayonnaise, as the classic coleslaw recipe calls for it.

Serve this as side dish, for sandwich stuffing or for wraps. It’s the best companion to any dish for your get together, BBQ parties or weekday dinner.

Easy Coleslaw Recipe (Vegan), best salad to have this Summer

Summer season calls for something light, cold, refreshing and quick to make without spending hours in the kitchen.

This recipe fits the bill perfectly as this is full of delicious vegetables tossed in creamy cashew dressing, and you won’t be missing the presence of mayonnaise here.

If you are looking for a new twist on an old classic then this flavorful and easy classic coleslaw recipe is going to become your favorite recipe like my version of Waldorf salad with an interesting twist .

In addition to that, if you really want to take the flavour of this salad to a notch higher, add some diced apple or pineapple.

 

What goes into making this Easy Coleslaw Recipe (Vegan)

Cabbage, purple cabbage and carrots are the main ingredients i have used. However, you could use red carrots, onions, apples or chunks of pineapple also.

The classic coleslaw dressing recipe calls for Mayonnaise but i wanted to make this vegan, so I have used cashews as a base along with dijon mustard, maple syrup,  apple cider vinegar,  lemon juice, garlic cloves, salt & pepper.

Easy Coleslaw Recipe (Vegan)

This Easy Coleslaw Recipe (Vegan) is made with cabbage, carrots, purple cabbage and finished off with dressing made of cashews, dijon mustard, vinegar or lemon and some basic seasonings

Ingredients
  

  • 1 head small size green cabbage shredded
  • 1/2 head small purple cabbage
  • 3 Large Carrots shredded
To make dressing
  • 30 Cashews
  • 3 Cloves Garlic
  • A Pinch Salt
  • 1 tsp Black Pepper powder
  • 2 tbsp Lemon juice
  • 1 tsp Apple cider vinegar
  • 2 tsp Dijon mustard
  • 2 tsp Maple syrup
  • As required Water
  • Handful coriander leaves for garnish

Method
 

Make the dressing
  1. For that grind raw cashews in a mixer jar to make a fine powder.
  2. To this add lemon juice, apple cider vinegar, maple syrup, Dijon mustard, pepper powder and salt. Add required amount of water to adjust the consistency.
  3. Transfer to a glass jar/container and refrigerate to cool before using. While serving, adjust the consistency by adding more water, if required.
Prep the veggies
  1. Shred the green and purple cabbage using a sharp knife, or thinly slice them using a mandoline slicer.
  2. Next, julienne the carrots or shred them.
Toss together
  1. In a big bowl transfer the shredded carrots and cabbage and add the prepared chilled dressing. Toss well to coat.
  2. Taste it and adjust the seasonings. In the last, add chopped coriander leaves.
  3. We prefer to have our coleslaw chilled so place the bowl in the fridge for an hour before serving.

Notes

1. Always pat dry your cabbage after washing it thoroughly as it may leave water after dressing is mixed into it.
2. You can make coleslaw ahead, but don't add the dressing until you are ready to serve it. Otherwise your slaw turns soggy.
3. Adding pineapple chunks or Apple juliennes makes it more tasty.
4. You may add store bought Mayonnaise if not vegan. Or can use Vegan mayo also.
5. You may add raisins and seeds of your choice. I haven't.

 

 

How to make Easy Coleslaw Recipe (Vegan) ?

Making this coleslaw recipe couldn’t be easier! To begin with –

Make the dressing

How to serve it?

It has such a unique crunchy texture and mouth melting taste that we love to have this practically with everything.

Moreover, this salad keeps well for many days in the refrigerator and is best enjoyed chilled.

It can be served as a side dish with any of the Paneer Frankie, Sprouted Kala chana kabab , Bottle gourd kabab, Moong kabab or with the burgers.
