Paneer Frankie Recipe | Paneer Kathi Rolls recipe is a very famous street food of Calcutta. Kathi roll is known for it’s yummilicious fillings of vegetables or some meat wrapped inside a tortilla/chapati. It’s easy to carry and eat, is very filling, and is perfect as any time snack.

My style of Paneer Frankie recipe|Paneer kathi roll recipe is stuffed with easy peasy to make stir fry Paneer that is all time favourite of my family.

What is Kathi Roll/Wraps?

Kathi rolls are Indian style wraps which are stuffed with veg or non veg fillings. This is most famous street food of Kolkata and now it is hot favourite of every Mumbaikar.

In Mumbai it’s also called Baida Roti, which means the frankie/wrap that is covered with an egg.

As Paneer is loved by all, and for a change other than potato tikki filling, I opted for this style of Paneer stir fry Kathi rolls/Frankie.

The method for making Paneer stir fry Kathi Rolls which I am sharing today is very easy to make. Here I have used homemade Chapatis/flatbread to be used as tortillas.

Paneer Kathi rolls/Frankie is famous street food. It's easy to carry & eat, perfect as any time snack, filling, & can be made to suit your needs.

Ingredients
  • To make Tortillas/roti dough :
  • 1 cup Maida
  • Or ½ cup maida & ½ cup whole wheat flour
  • Salt to taste
  • ¾ cup Water (approx)
  • 1 teaspoon Oil to finish up the dough
  • To make Paneer & Mushroom stir fry
  • 200 gms paneer
  • 1 pack of mushrooms
  • 3-4 tbsp oil
  • 1 tsp Cumin seeds ,
  • 2 bay leaves,
  • 2-3 cloves
  • 1.5 tsp crushed ginger garlic
  • 1 medium size onion chopped,
  • 2 medium size tomato chopped
  • Salt, turmeric, red chilly powder, cinnamon to taste
  • 1.5 tbsp kitchen king masala
  • Grounded ¼ cup of almond, cashew, poppy seed powder
  • 1 medium size onion
  • 2 medium sized tomatoes
  • 1 small sized green capsicum
  • 1 tsp Kasuri methi crushed
  • 2 tsp Fresh cream
  • For assembling:
  • Green chutney as required
  • Lahsun chutney as required
  • Peeled, washed and cut onions as required
  • Shredded lettuce as required
  • Pre cooked Rotis/wraps/Tortilla 4
Instructions
  1. To knead a soft tortilla/roti dough, assemble the dough Ingredients.
  2. Keep the dough covered and rest it for 10 minutes.
  3. Make equal size dough balls. Using a rolling pin, roll it like flatbread/Chapati.
  4. Heat tawa.
  5. When tawa is hot, place the rolled roti onto the hot tawa. Flip it once and cook until evenly fluffed, cooked and browned on both the sides.
  6. Fully cooked and puffed up Tortillas/ roti is ready.
  7. Take it off the flame and apply ghee. Place it in a casserole. Repeat the process and make more tortillas.
  8. To make paneer mushroom stir fry :
  9. Add cumin, cloves, ginger garlic paste, bay leaves to oil
  10. Add chopped onions and cook it well until it turns translucent.
  11. Once onions are done nicely, add chooped mushrooms.
  12. Saute nicely for a while. Add finely chopped tomato, turmeric powder, red chilly powder, kitchen king powder.
  13. Add 1 tsp garam masala, salt to taste, cinnamon powder, grounded cashew, almond, poppy seed powder and cook it really well until it starts oozing out the oil.
  14. Once all these are cooked really well, add onion, tomato, green bell pepper that was cut in big pieces and paneer at this step….after adding the paneer..stir very gently else paneer will break or scramble….
  15. Let it cook well but do not cover the pan at this time….once done you can add lil of dried fenugreek/kasuri methi, chopped cilantro/coriander leaves and fresh cream to it. Stir fry sabzi is ready.
  16. Let’s start assembling Kathi rolls/frankie
  17. Spread green & red chutney on the wrap/roti.
  18. Place lettuce in the center.
  19. Spread spoonful of paneer mushroom stir fry sabzi over lettuce leaf.
  20. Add some onion.
  21. Spread generous amount of green chutney on top. Sprinkle some lemon juice or chaat masala on top.
  22. Start folding the roti.
  23. Secure the edges with a toothpick.
  24. Or wrap the kathi roll in wax paper.
  25. Warm kathi rolls are ready.
  26. Serve hot with potato fingers

 

 

Ingredients to make Tortillas/roti dough :

1 cup Maida

To make Paneer mushroom stir fry

200 gms paneer
1 pack of mushrooms
3-4 tbsp oil
1 tsp Cumin seeds ,
2 bay leaves,
2-3 cloves
1.5 tsp crushed ginger garlic
1 medium size onion  chopped,
2 medium size tomato chopped
Salt, turmeric, red chilly powder, cinnamon to taste
1.5 tbsp kitchen king masala
Grounded 1/4 cup of almond, cashew, poppy seed powder
1 medium size onion
2 medium sized tomatoes
1 small sized  green capsicum
1 tsp Kasuri methi crushed
2 tsp Fresh cream

Paneer Lababdar Kathi rolls/Frankie

Add cumin, cloves, ginger garlic paste, bay leaves to oil
Add chopped onions and cook it well until it turns translucent.

You will need :

Green chutney as required
Lahsun chutney as required
Peeled, washed and cut onions as required
Shredded lettuce as required
Pre cooked Rotis/wraps/Tortilla 4

Let’s start assembling them.

Spread green & red chutney on the wrap/roti.

Place lettuce in the center.

Spread spoonful of paneer mushroom stir fry over lettuce leaf.

Add some onion.

Spread generous amount of green chutney on top.  Sprinkle some lemon juice or chaat masala on top.

Start folding the roti.

Secure the edges with a toothpick.

Or wrap the kathi roll in wax paper.

Warm kathi rolls are ready.

Serve hot with potato fingers.
