Avocado, Pineapple and Coconut ice cream is vegan and gluten free, silky smooth, luscious, eggless, home-made, with just 6 ingredients recipe. This ice cream doesn’t require icecream maker, this is just blend and freeze recipe.
I am so excited to share my very first ice cream recipe today. I tasted avocado ice cream a few years ago and fell in love with it’s flavor. My family loves home-made desserts and Mango falooda is their favourite.
While avocado is only my favorite and I love eating it in every possible way, my Sonny boy doesn’t like to eat it. But he loves to eat ice creams, so I decided to incorporate unusual combinations for making it at home.
As avocado isn’t sweet on its own, I have added pineapple and coconut in the icecream to balance the sweetness & flavors.
Moreover, one of the best thing to make this recipe is that no ice cream maker is required. All you need is, the ingredients and a blender.
This homemade avocado pineapple and coconut ice cream is smooth, luscious, refreshing and a great way to treat, even if you can’t eat dairy!
It requires minimum 8 hours or overnight freezing. But if you like a more soft serve kinda texture, serve it up immediately after freezing it once.
If you like a more firm texture, put it in a container and freeze until it hardens up a bit. Remove & pulse in the blender. Then freeze again and repeat this process 2 to 3 times.
So let’s get started.
Instructions to make avocado pineapple and coconut Icecream
Cut the avocado in to half. Remove the seed and scoop the flesh. Put this into a food processor. To this add chopped pineapple, and shredded coconut. Whirl it until smooth.
Next add coconut milk and non dairy heavy cream into the blender and pulse once again.
Mix sugar and blend everything well.
Pour into a plastic box/metal container with cover, and refrigerate for few hours until cold.
Freeze for about 2 to 3 hours, then with the help of fork, mash it into a slush. Again transfer this back in the freezer.
Repeat the freezing and mashing about 2 to 3 times so that the ice cream will be smooth. Once your are done freeze it overnight.
Scoop it and serve with coconut slices and pineapple.

Ingredients
- Avocados 2
- Pineapple 1 cup
