No cook, easy to make Gud ka Sharbat | Gol Pani | Jaggery summer drink is a delicious cooler made with jaggery, lemon juice, soaked sabza (takmaria) or Basil seeds and mint leaves. This is vegan and gluten free and dairy free too.

What is Gud ka Sharbat | Gol Pani | Jaggery summer drink
Also known as gur/Gol (jaggery) sharbat, it’s a traditional Indian summer cooler made since ages by dissolving jaggery in water and enhancing it’s taste by adding lemon juice and basil seeds.
According to Indian Ayurvedic traditions this jaggery based sharbat is known for its cooling properties and ability to replenish energy in hot weather. It helps you to stay hydrated and energized during scorching summer heat.

A must try natural summer cooler
In many regions, Gud Ka Sharbat has been an integral part during Ramadan/Ramzan. The iftaar is begin with offering this gud ka sharbat and dates which gives a natural sugar boost to your body after a day of fasting.
It is also widely popular in Punjab, Rajasthan, and Uttar Pradesh, where jaggery is main ingredient used in sweets and drinks.

Gud ka Sharbat | Gol Pani | Jaggery summer drink
Ingredients
- 1 cup jaggery tightly packed
- 4 cups water
- 2 teaspoon Sabza/ basil seeds/ tukh malanga
- 2-3 tablespoon lemon juice
- few mint leaves
- 4 Lemon slices for garnishing
Instructions
- In a big and deep vessel first add chopped gud/jaggery. To this add water and stir few times. Cover and keep aside for 1/2 an hour to dissolve the jaggery completely.
- In a bowl soak sabza/takmaria/basil seeds in water for 15 minutes. Keep it aside to swell up.
- Once the jaggery has dissolved in water completely, strain it to remove any impurities.
- Transfer this to a jug. Add required chilled water, lemon juice and soaked sabza to it. Adjust the sweet sour flavour according to your taste.
- For serving, fill a glass with ice cubes first. Add lemon slices and a few mint leaves in each glass. Top with chilled jaggery water and stir well.
- Serve immediately and enjoy this cooling drink.

Top tips
1. I have used organic jaggery to make this sharbat however you may use normal jaggery or jaggery powder also.
2. You may incorporate spices like black salt, cumin, and ginger, making it not just a refresher but also a digestive aid.
3. Squeeze of fresh lemon juice gives this sharbat a good taste.
