Shrikhand Recipe | How to make Shreekhand is a popular traditional sweet dish of india. It’s creamy  yogurt/ hung curd based, no cook recipe made just with 2 prime Ingredients.

The prime ingredients of this dessert are hung yogurt (strained curd) & powdered sugar. In addition to that, It’s flavoured with green cardamom powder, saffron and garnish of pistachios.

This recipe may or may not include dry fruits. However it is generally flavoured with cardamom & kesar/saffron.

It’s served plain many times along with Dal tadka,Gobhi aloo sabzi, Vegetable raita, Zero oil Carrot pickle and chapati in a thali.

What can be more lovely than the word shrikhand. This desi dessert is so easy to make and best to relish during summer season.

Shrikhand is very popular dessert in Maharashtra, Gujarat and in some parts of Karnataka. It’s known as shikarni or Shikharini which is a Sanskrit term of Shrikhand according to Wikipedia.

What things I need to take care while I make shrikhand at home

As I hail from Gujarat, I grew up eating home-made shrikhand specially made by my Masi ma. I very well remember after my marriage whenever i used to visit my Mayeka, she used to pack such a big container of shrikhand for me.

So this Shrikhand recipe is very special as I learnt it from her and mastered it over the years. The recipe is very easy to make but you need to take care of few things to make it perfect.

 

 

 

First and foremost is Yoghurt/curd. It can be home-made or Store bought Greek yogurt. I prefer to use fresh and home-made curds. Make sure not to use sour curds.

Strain the curd

Straining the curd properly is the key to a perfect and smooth shrikhand. Make sure there is no trace of water left in the curd.

After hanging curd for few hours, immediately tranfer it to fridge by keeping a thick towel underneath in the bowl.

The process of hanging curd during summer season can be followed in the fridge also by placing it over the sieve so it will prevent it from turning sour.

Sweetner

Powdered sugar is always used to sweeten this dessert. You may use jaggery, brown sugar, cane sugar or stevia also. Adjust the sweetness as per your preference.

Flavouring

I have used cardamom and saffron to flavor the shrikhand. Please take note to soak saffron in warm milk for some time before adding to shrikhand.

Nuts

I have used pistachios and almonds. You may add your choice of dry nuts.

Serving Suggestions

Shrikhand served with poori and aloo ki khatti meethi sabzi is a classic combination. However you can serve it as a dessert on its own.

Step by step instructions and pictorial presentation to make Shrikhand Recipe | How to make Shreekhand

Soak the saffron strands in 2 tbsp of warm milk.
Use a strainer and place a cheese cloth/muslin cloth over it and pour the yogurt into it.

Squeeze the yogurt in muslin cloth to drain out the excess water. Tie the cloth from all four sides and hang it at a place where excess water can drip.

After 4-5 hours, remove the hung yogurt in a large bowl. Now add the powdered sugar, cardamom powder. Whisk it well.

To this add chopped dry fruits and saffron+milk.

Whisk well till combined. You can adjust the sugar as per your requirement.

Pour the Srikhand to a serving bowl and garnish with some more chopped pistachios and almonds and few saffron strands.

The shrikhand stays good for 2-3 days if placed in an air tight container in refrigerator or in the freezer.
