Strawberry China grass Pudding Recipe | Eggless strawberry pudding is easy, quick, Gluten free & can be made vegan, vegetarian, summer season dessert made with few easily available ingredients.
It is made of milk, strawberries, sugar, dry fruits and of course china grass/agar agar.

Strawberry China grass Pudding Recipe, is this easy?
Definitely Yes. As this recipe uses minimal ingredients, easy to make and eggless, is what drives me to try different variations with china grass.
This dessert is silky smooth, light on stomach, kid friendly and perfect for any occasion.
Why use China grass instead of it’s other counterparts?
I have been eating china grass since childhood. It’s much more easier to handle, sets well and perfect for puddings and custards.
I have earlier worked with Gelatin to make desserts like No bake mango cheesecake and Virgin pina colada no bake cheesecake.
But with my experiments, I felt that china grass gives a more light feel to the dessert as compared to gelatin.
How to serve this?
This strawberry pudding recipe suffice for six individual servings and perfect dessert to serve post dinner or can be served to kids as cool treat after school hours.
This dessert needs a little bit of pre planning since you need to set and refrigerate it for a couple of hours to allow it to chill.
At the time of serving, you can top it with strawberry syrup, chopped nuts, or with just fresh chopped strawberries.
With each bite you will feel the smooth, creamy, velvety texture with crunch of nuts and Strawberry pieces.
So without further ado, let’s begin and learn how to make strawberry pudding recipe from scratch with china grass.
Step by step instructions and pictorial presentation to make Strawberry China grass Pudding Recipe | Eggless Strawberry Pudding
First assemble all the ingredients.
Cut the half packet of china grass/agar agar (around 5 grams) into small pieces using scissors.
Soak this into 1/2 liter (pre boiled and cooled) milk for about 15 minutes. Keep it aside.
Meanwhile chop strawberries in small pieces.
Now boil milk with china grass on slow flame and stir it continuously till it dissolves completely. Switch off the flame and strain the milk mixture through sieve.
Place this pan again on stove and add sugar and cardamom powder to this and cook for 5 more minutes. Add Saffron and chopped nuts.
Cool it a bit and pour into moulds. After that immediately mix chopped strawberries.
As china grass sets on room temperature quickly you need to keep check on it.
Keep in the fridge to chill for 3 to 4 hours. De mould and serve with chopped dry fruits on the top.
Notes :
1. China grass sets quickly at the room temperature so pre prepare everything and then start making this dessert.
2. You can set china grass in small individual bowls or in shot glasses.
3. Adjust the quantity of sugar according to sweetness of strawberries.
4. For Vegan Friendly options, use Coconut or Almond milk.
