This easy recipe creates a fantastic fusion and a smart makeover of famous street food Pav bhaji.

In this Pav bhai fondue recipe, the mashed mixture of vegetables is cooked with cheese, milk, cream & pav bhaji masala. It is served hot with buttered pav/dinner rolls.

Ingredients used to make this fusion Indian fondue

Don’t get surprised as this recipe has no potatoes, but retains all the other key ingredients to make pav  bhaji. The milk and cheese here add a beautiful texture to this fondue and creates a mouthwatering fusion of two unique dishes.

 

What is Fondue?

According to WIKIPEDIA fondue is melted cheese dish served in a pot over a portable stove ignited with a candle and eaten by dipping bread into the cheese using long-stemmed forks.

A quick & easy recipe

As the new year has set in and winter is finally here in this part of the world, i always crave for short, quick, easy and chatpati  recipes. I feel regular meals are so bore sometimes.

Fusion cooking comes to my rescue in these times and taking cue from Tarla Dalal’s this wonderful recipe with some modifications, i couldn’t wait to try this out soon.

Extremely customizable recipe

As the pav bhaji fondue recipe is extremely customisable, i made this to suit to our palate. If you like more tomatoes, throw in some more, don’t like onions, reduce it, love spicy add more chillies.

Just make it the way you want and bring out your fondue pot this season. Make your family and friends feel special, without actually having to slog for hours and use any fancy ingredients.

So go ahead and treat your loved ones with this lipsmacking East meets West showstopper Pav bhaji fondue recipe.

 

Pav bhaji Fondue

 

Step by step instructions and pictorial presentation

Heat the oil & butter in a deep non-stick pan, add the garlic paste and sauté for 30 seconds. Once it turns pinkish, to this add chopped onions and capsicum and sauté for 2 minutes.

Mix in the tomatoes and 1 tbsp of water, mix well and cook on a medium flame for 2 minutes. Mash the vegetables with help of a masher, while stirring occasionally.

According to your taste, add & adjust Pav bhaji masala quantity, chilli powder, cheese, milk and salt. Stir it and mix well. Cook on a medium flame for 1 minute.

Allow the mixture to cool, and blend in a mixer to a coarse paste.

Transfer the mixture back into the pan, and to this add the fresh cream & mix well.  Let it simmer on medium flame for 1 more minute.

Now it’s time to serve Indian style spicy pav bhaji fondue. Remove it and pour in fondue pot. Place it on the fondue stand with burner ignited. Serve immediately with herb bread or pav toasted in butter for dipping.

  • 2 tsp butter
  • 1 tsp oil
  • 1 tsp garlic (lehsun) paste
  • ½ cup chopped onions
  • ¼ cup chopped capsicum
  • ¾ cup chopped tomatoes
  • 1+1/2 tsp pav bhaji masala
  • 1+1/2 tsp chilli powder
  • ½ cup grated processed cheese
  • ¼ cup milk
  • salt to taste
  • 1 tbsp fresh cream
  • For Serving
  • herb garlic bread or pav/dinner rolls
