Lauki ke kabab | Dhoodhi kabab | Bottle gourd kababs is a delicious snack recipe that is vegan, made with not so favorite vegetable of everyone, lauki/doodhi/bottle gourd. In addition to that it consists oats, peanuts and some basic spices from your kitchen.
After making these kababs, you will start to love doodhi as they turn out to be really delicious and moreover no one will come to know that you have used doodhi making these kababs.
Serve these as evening snack to your kids as otherwise kids don’t prefer to have it in sabzi form. Similarly, I serve these Oats dalia vegetables muthia and my kids eat these happily without any complaints.

All you need is 2 main ingredients, Lauki/doodhi/bottle gourd and oats. Mix it with few other basic spices to make these delicious kababs at home.
In addition to that, we need not feel guilty eating these, as these are shallow fried in minimal oil.
Plus the fact that you can actually sneak in lot of vegetables like french beans, carrots, Beetroot etc for the kids to eat without knowing it.
Therefore these make a perfect evening snack for everyone and it’s not very difficult to make either. Do try these and let me know how your family likes it!

Wash, Peel and grate the dhoodhi/lauki/ bottle gourd. Squeeze it in between your palms and remove excess water. Keep it aside.
Make paste of ginger, garlic and chillies. Take peanuts and coarse grind it. Mix this with grated dhoodhi. To this add oats.
Now start mixing the all spices mentioned above in the grated dhoodhi/ lauki/bottle gourd. In the end add besan/gram flour.
Ensure the dough is not watery, if required add more besan. Shape them into small discs and flatten it.
Heat a nonstick pan, put 2 tsp oil and shallow fry them on both sides. Once crispy on both sides remove this on serving plate.
Serve hot with slices of onions, Green chutney, Schezwan sauce, or tomato ketchup.

- Besan/gram flour – 1-2 spoons
- Ginger – ½ inch

- Chillies 2

- Salt to taste

- Coriander powder – 1 tbsp
- Coriander leaves handful
- Cumin seeds- 1 tsp
- Chili powder – 1 tbsp
- Garam masala powder – 1 tsp
- Chaat masala powder – 1 tsp
- Oil – for shallow frying
- Wash, Peel and grate the dhoodhi/lauki/ bottle gourd.
- Squeeze it in between your palms and remove excess water. Keep it aside.
