Lauki ke kabab | Dhoodhi kabab | Bottel gourd kababs is a delicious snack recipe that is gluten free, made with not so favorite vegetable of everyone, lauki/doodhi/bottle gourd. In addition to that it consists oats, ground nuts and some basic spices from your kitchen.

Ingredients
  • Bottle gourd grated – 1 medium sized, around 1 cup
  • Oats – 1 cup
  • Besan/gram flour – 1-2 spoons
  • Ginger – ½ inch
  • Garlic cloves – 5-6
  • Chillies 2
  • Roasted Peanuts – 2 tbsp
  • Onion – 1
  • Salt to taste
  • Turmeric powder – ½ tsp
  • Coriander powder – 1 tbsp
  • Coriander leaves handful
  • Cumin seeds- 1 tsp
  • Chili powder – 1 tbsp
  • Garam masala powder – 1 tsp
  • Chaat masala powder – 1 tsp
  • Oil – for shallow frying
Instructions
  1. Wash, Peel and grate the dhoodhi/lauki/ bottle gourd.
  2. Squeeze it in between your palms and remove excess water. Keep it aside.
  3. Make paste of ginger, garlic and chillies.
  4. Take peanuts and coarse grind it. Mix this with grated dhoodhi. To this add oats.
  5. Now start mixing the all spices mentioned above in the grated dhoodhi/ lauki/bottle gourd. In the end add besan/gram flour.
  6. Ensure the dough is not watery, if required add more besan. Shape them into small discs and flatten it.
  7. Heat a nonstick pan, put 2 tsp oil and shallow fry them on both sides.
  8. Once crispy on both sides remove this on serving plate.
  9. Serve hot with slices of onions, Green chutney, Schezwan sauce, or tomato ketchup.
