This Eggless Tutti Frutti cake recipe | Tutti fruity cake is bakery style moist, spongy, fluffy, airy, with lovely crumb, studded with candied tutti frutti pieces.
In addition to that it doesn’t require any oven and has all the goodness of a perfectly baked Vanilla sponge cake (eggless).
However you can bake this cake in an oven too, if you don’t wish to use pressure cooker method.

Tutti frutii is actually colourful candied raw papaya or watermelon peel pieces that are used as toppings for many desserts like Mango falooda and Avocado pineapple Coconut ice-cream.
These candied tutti frutti are used in various bakery products, including cookies, milk-breads, buns and cakes.
This is the perfect cake to bake or just when you want something sweet to serve to your guests.
I made this cake impromptu while cooking lunch, for a friend, who I was meeting after a long time. She loved it to the core. So you can imagine how easy this is to make.
This cake goes well with evening chai/ coffee.

After making many cakes with eggs, I somehow started to like eggless cakes more. As Christmas is fast approaching, I wanted to make some very easy fruit based recipe.
Last year I had already shared my super quick and Easy 5 minutes Christmas fruit cake with you all.

Yes it’s for real. I have baked this cake using pressure cooker method to make it easier for everyone who want to bake, but they have no access to Oven or microwave.
Making cakes in pressure cooker is so easy and the results are just fantastic. For the first time i tried Semolina/sooji coconut cake using pressure cooker method, and it was super successful.
That time I didn’t keep anything at the bottom of cooker to bake the cake. But this time I have used sea salt at the base. And it worked both the ways beautifully.

Step by step instructions and pictorial presentation to make Eggless tutti frutti cake recipe | Tutti fruity cake | Pressure cooker Tutti Frutti cake
Take a big size aluminium pressure cooker and remove gasket (ring) and whistle. Add enough sea salt at the base of cooker.
Preheat the cooker for 10 minutes on medium flame as we preheat the oven.
In a mixing bowl, take the curd, sugar, baking soda and baking powder. Whisk it well. Cover and keep it aside to rest for 5 minutes.
To this add vanilla essence, salt and melted butter. Make a smooth paste. You can use hand blender or whisk to blend all the ingredients easily.
Sieve all purpose flour/maida at least 3 times and add to curd & butter mixture. Mix it slowly and gradually using cut and fold method.
Add 1 tbsp or more of milk if the batter is too thick. The batter should be of ribbon consistency.
In a bowl take 1 tbsp all purpose flour and toss tutti frutti in that so that it would not sink in the batter.
Mix tutti frutti in cake batter.
Meanwhile grease a cake tin with oil and dust with flour. Lay a parchment paper in the bottom.
Pour the batter and tap it gently over the kitchen counter to remove air bubbles if any. Garnish some more tutti frutti on top.
Now place a metal stand inside the cooker in the bottom and keep the cake tin on it inside the cooker. Cover the cooker with lid.
Bake for 30 to 35 minutes on low heat. To check if it is cooked, insert a tooth pick and it should come out clean.
OR
You can bake this in a preheated oven at 180°C for 35 to 40 minutes or till the toothpick inserted comes out clean.
Let it cool and then cut into pieces.
Enjoy cake with a cup of tea…

- 1 cup = 250 ml grams
- Curd 1 cup
- Powdered sugar 1 cup
