This stew is kind of comfort food as its hearty, filling and like a warm hug on cold winter nights. Moreover, there is no effort and most veggies from the fridge team up to make a rich, savory bowl of goodness.

Easy Vegetable Stew Recipe (Vegan)
Ingredients
- 50 ml olive oil
- 1 stick cinnamon
- 1 bay leaf
- 20 g garlic chopped finely
- 50 g onion chopped finely
- 30 g tomato chopped
- 20 g celery diced
- 50 g button mushrooms chopped
- 50 g each yellow and green zucchini cubed
- 30 g green beans chopped
- 30 g each red green and yellow bell pepper, cubed
- 50 g broccoli florets
- 30 g carrots cubed
- 20 g asparagus tips
- 1 tsp chopped rosemary
- 1 tsp chopped basil
- 2 tsp chopped parsley
- 20 ml tomato pureed
- 2 tsp sea salt
- 2 tsp pepper powder
Instructions
- Heat olive oil in a pan and add cinnamon and bay leaf. When it starts to crackle, add garlic and onion, and saute until onion is soft and translucent.
- Add chopped tomatoes and cook till oil starts to separate.
- Next add all remaining vegetables and the herbs, cover and cook until vegetables start to sweat.
- In the last add tomato puree, and cook till all vegetables are tender. Check seasoning, and adjust the salt accordingly. Serve hot by itself or with some steamed rice.
