Ingredients
50mlolive oil
1stick cinnamon
1bay leaf
20ggarlicchopped finely
50gonionchopped finely
30gtomato chopped
20gcelerydiced
50gbutton mushroomschopped
50geach yellow and green zucchinicubed
30ggreen beanschopped
30geach redgreen and yellow bell pepper, cubed
50gbroccoli florets
30gcarrotscubed
20gasparagus tips
1tspchopped rosemary
1tspchopped basil
2tspchopped parsley
20mltomato pureed
2tspsea salt
2tsppepper powder
Instructions
Heat olive oil in a pan and add cinnamon and bay leaf. When it starts to crackle, add garlic and onion, and saute until onion is soft and translucent.
Add chopped tomatoes and cook till oil starts to separate.
Next add all remaining vegetables and the herbs, cover and cook until vegetables start to sweat.
In the last add tomato puree, and cook till all vegetables are tender. Check seasoning, and adjust the salt accordingly. Serve hot by itself or with some steamed rice.
