You all must be wondering after reading the title of today’s post about Christmas fruit cake in 5 minutes. Yes, this is possible. And that too without soaking the fruits for months in advance. And you want it eggless and alcohol free as well.

Christmas ushers in the festive cheer. How about bringing it in simple and easy way by making it in microwave in just 5 minutes that too eggfree and alcohol free.

There are several ways of making this cake which is typically prepared during christmas. The cake is generally made using wine and eggs.

In this recipe i have skipped the eggs and replaced the wine with craneberry juice which would give this cake almost the same taste.

This recipe of an eggless and alcohol free cake which i am sharing today is quite easy and very versatile too. One can add or omit the ingredients according to their preferences.

The recipe is just assemble all the ingredients, mix, pour and micro high for 5 minutes and you are done. Sounds so exciting and easy right?

Christmas fruit cake, a wonderful nostalgia

The post about chirstmas cake makes me nostalgic as when we were in college, our Christian friends used to bring us Christmas goodies along with fruit cake.

So this time i decided to make one at home and the aroma wafting while baking this cake can’t be described in words.

The thumb rule to make chirstmas fruit cake is perfect balance between sweet and sour flavours.

The sweetness in the cake comes from the dried or candied fruits while the sourness is achieved by soaking these in alcohol for months.

The no soak, alcohol free, eggless Christmas fruit cake in microwave in 5 minutes is very easy to make. It's just assemble, mix, pour and micro high for 5 minutes and it's ready.

Ingredients
  • Dry ingredients :
  • All Purpose Flour / Maida 2 cups
  • Cocoa powder 3 tblspn
  • Baking soda ½ tsp
  • Baking powder 1 tsp
  • Cinnamon powder ¼ tsp
  • Wet ingredients :
  • Water ½ cup
  • Brown Sugar ½ cup
  • Craneberry juice ½ cup
  • Vegetable Oil – ¼ cup
  • Curd ¼ cup
  • Honey 4 tblspn
  • Fruits and nuts
  • Dried Fruits ½ cup (Raisins, Dates, Tutti Fruity, Craneberry, Raspberries)
  • Nuts 3 tblspn ( Pecans/ Walnuts, Cashews, Almonds, Pistachios)
Instructions
  1. First soak all dried fruits in ½ cup cranberries juice.
  2. Cover and keep aside for few minutes till we assemble all the ingredients to make cake.
  3. Take water in a microwave safe bowl and micro high for a minute till the water is hot.
  4. Mix hot water in previously soaked dried fruits and nuts and let it steep for few minutes.
  5. For mixing wet ingredients into soaked fruits, add honey and brown sugar to this.
  6. Next mix vegetable oil. Stir well and keep aside.
  7. In the mean time, for mixing dry ingredients take all purpose flour/maida, cocoa powder, baking soda, baking powder, cinnamon powder in a bowl and mix well.
  8. Sieve it twice.
  9. Now mix wet and dry ingredients together nicely with spatula and mix both well.
  10. Add curd and mix it well again. Add some more tuti fruity to this batter.
  11. Take a microwave safe bowl/tin, brush all side with oil.
  12. Place butter paper covering the bowl/tin for making cake.
  13. Pour the batter in till the half way.
  14. If required use 2 small bowls/tins. As the cake would need space to rise.
  15. Preheat the microwave for a minute.
  16. Place the bowl/tin inside the microwave and set the timer for 5 mins.
  17. Micro high the cake for 5 minutes and when it is done, leave it inside the hot microwave with a standing time of 5 mins.
  18. Remove it from oven, and check with a toothpick inserted.
  19. If it comes out clean it's ready.
  20. Allow it to cool completely. Invert it on a plate, slice it and enjoy.
Notes
1)Dont fill the microwave safe bowl to the brim. As the cake rises, just fill it half way. Or divide the batter in two bowls and micro it.

2)After you take the cake out of the microwave, allow the cake to cool completely before slicing it.

    I made this cake after halving the ingredients and it turned out superbly moist and yet light and flavourful. The cake held its shape intact which enabled me to cut perfect slices. I just like my cakes sweet, so I topped the cake with a thin layer of baking chocolate which became a pretty glaze. Thanks a ton for this brilliant recipe which can be made in a jiffy.
