These Spiced Whole Wheat Cookies | Atta Biscuits are baked, eggless, crisp, sweet, spicy, extremely delicious, addictive and delicately spiced with ginger & cinnamon.
In addition to that they are made from whole wheat flour. These cookies are so simple to make, look pretty with lace effect.
I was so thrilled to have found them on Pinterest and was more than happy to use beautiful, handmade lace mat (gifted by my Sister-in-law Megha few years ago) to make these Spiced Whole Wheat Cookies | Atta Biscuits.
Serve these along with evening tea/coffee or simply with a glass of milk for an evening snack to your children.

Preheat the oven to 180 degrees C. Line baking tray with parchment paper.
First gather all the ingredients and keep aside.
Cut the butter into small pieces.
Sift twice the whole wheat flour, ginger powder, cinnamon powder, baking powder and salt.
In the bowl add the flour mix to the cold butter, and make a breadcrumb like mixture by rubbing it it between your both hand fingers.
Mix in the sugar. Then add the beaten curd/yogurt, and mix well.
Now add required amount of milk to make a firm yet pliable dough.
Wrap the dough in a cling wrap and refrigerate for an hour. This process will firm up the dough and make it crisp when baking.
Once chilled, dust the surface with some flour and roll the cookie dough by placing lace mat over it.
After that using a cookie cutter cut them into circles of 1/4 inch thickness.
Arrange the cookies in a baking tray.
Bake for 15-18 minutes or until you notice the cookie turning crisp and smell done and edges start turning brown.
Once done, remove the cookies from the oven and allow them to cool on a wire rack. Once cooled, store the cookies in an airtight container for about 2 weeks.
