A delicious Vegan Sindhi snack Seyal fulka | Seyal Maani | Leftover Roti snack is one very popular way of cooking your leftover rotis/chapati in tangy, spicy tomato garlic gravy.

This recipe was specifically created to use up day old leftover roti/chapati by Sindhi community.

It’s basically turning those leftover roti morsels and giving them a makeover by dunking into tangy, spicy curry. And its so simple to cook using just few basic ingredients.

So, what do you do when you’re left with some overnight roti you don’t want to throw away.

Most people use the leftover roti in many ways like making Churma Ladoo, but Sindhis do it differently. They make the seyal fulka by cooking pieces of the left-over rotis with garlic, tomatoes and green chillies to make yet another spicy and tangy treat.

A delicious Vegan Sindhi snack Seyal fulka | Seyal Maani is one very popular way of cooking your leftover rotis/chapati in tangy, spicy tomato garlic gravy.

Ingredients

  • 4 chapati/roti preferably a day old
  • 2 Onions chopped finely
  • 6 garlic cloves minced
  • 1 inch Ginger minced
  • 2 green chilies minced
  • 2 Tomatoes grated
  • 3-4 tsp oil
  • 1 tsp Mustard seeds
  • 1 sprig Curry leaves
  • Salt to taste
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1.5 cups or more water
  • Fresh coriander leaves chopped to garnish

Instructions

  • Cut the chapati into small bite size pieces.
  • In a heavy bottom pan heat oil. Add mustard seeds.
  • Once it splutter add minced garlic, ginger and chillies. Cook it for 2 minutes. Once the raw aroma of ginger garlic goes away, add chopped onion.
  • Saute the onions till it turns translucent, after that add grated tomatoes, salt, turmeric and red chilli powder.
  • Cook this mixture on high heat for couple of minutes. Reduce the flame and cook till the raw smell of mixture goes away and oil separates from it.
  • Add water to make gravy. As soon as the mixture starts to boil, dunk the pieces of rotis to this boiling mixture.
  • Cook on medium heat till they are completely coated with all masala and all the water is dried up. Garnish with coriander leaves.
  • Serve hot with roasted papad and some hot tea.
