Super quick and easy Puffed rice Uttappam|Murmura Uttapam recipe made with our very own humble ingridient Murmura, which we generally use to make chaat/ Bhel.

The best part of making these Puffed rice Uttappam|Murmura Uttapam for instance is the batter. It doesn’t need any fermentation, unlike any other Dosa batter. Therefore it is a time saver recipe for keeps.

It so happened once while having juice post my workout session at the Gym, Anna, as we call him, suggested that I should try using puffed rice to make Dosas and Uttappams.
He very well knows my undying love for South Indian cuisine. I must thank Anna, for sharing his idea of this super soft, spongy puffed rice Uttappam recipe with me. The star of this recipe here is Murmura/Puffed rice.
Puffed rice, the magical ingredient worked wonders in this recipe. Just top your Puffed rice Uttapam|Murmura Uttappam with choice of your vegetables and serve it with Sambhar and Coconut chutney.

Step by step instructions to make Puffed rice Uttapam | Murmura Uttapam
In a big bowl, mix soaked urad dal paste, buttermilk soaked sooji/rava, puffed rice/ murmura powder together.
Add water to make uttapam consistency batter. After that mix salt, pepper, oil, curd and eno. Mix it well.
Thereafter add eno in the uttapam batter in the last, when you are ready to make uttapams. Spread uttapam batter with the help of ladel, on a hot non stick tawa.
Keep the flame on low.
Decorate with chunks of tomatoes, onion and capsicum. Cover it with a lid and let it cook till it becomes crisp on slow flame.
Slowly flip the uttapam on to the other side. Once it’s cooked and it has achieved golden colour, serve hot with sambhar and coconut chutney.
Notes to make Puffed rice Uttapam | Murmura Uttapam
1.This is a good breakfast option, as this doesn’t need any fermentation.
2. Just soak sooji and Urad dal for few hours beforehand and grind it and keep it ready out or in the fridge.
3. It would be very handy as you just need to chop veges and make instantly.
Recipe card
- Urad dal 1 cup (soaked for 3-4 hours and grind in mixer with minimum water)
- Sooji/rava/Semolina 1 cup (soaked in enough buttermilk for 2-3 hours)
- Murmure/puffed rice 1 cup (Crushed in a mixer)
- Ginger Chilli paste 2 tbsp
- Black Pepper powder 1 tsp
- Thick curds 3-4 tbsp
- Oil 1 tsp
- Eno 1 tbsp
- Salt to taste
- 2 Capsicums
- 2 tomatoes, chopped in chunks
- Onions 2 (finely chopped)

- Add water to make uttapam consistency batter. After that mix salt, pepper, oil, curd and eno. Mix well.
- Thereafter add eno only in the last when you are ready to make uttapams. Spread uttapam mix with the help of ladel, on a hot non stick tawa.
- Keep the flame on low.
- Decorate with chunks of tomatoes, onion and capsicum. Cover it with a lid and let it cook till it becomes crisp on slow flame.
- Slowly flip the uttapam on to the other side.
- Let it cook nicely.
- Serve hot with sambhar and coconut chutney.
