Pav bhaji Bruschetta | How to make Pav bhaji Bruschetta is a fusion recipe that combines Mumbai style pav bhaji and bruschetta in one to make a lip smacking good snack.

Bruschetta is an Italian appetizer that is made with grilled bread rubbed with garlic and olive oil and has toppings of veges, tomatoes and cheese.

Whereas, Pav bhaji is a famous street food of Maharashtra that is spicy, full of vegetables and is served with buttered dinner rolls/pav.

We once had this amazing bruschetta at a restaurant here in Mumbai, and we loved the concept of mixing two cuisines. It tasted yummilicious and I decided to try this at home.

Earlier I experimented with pav bhaji and converted it into Pav bhaji Fondue.

Moreover you may make this bruschetta recipe using leftover pav bhaji put to good use.

Let’s move on to make step by step recipe to make bruschetta.

Clean, wash and chop all the vegetables mentioned above. In a pressure cooker add water and salt and bring it to boil.

Add all chopped vegetables except green peas to it (I add green peas in to the cooker along with all veges as my family prefers that way).

Pressure cook vegetables on high upto 2 whistles. Now lower the flame and cook for about 10 minutes.

Switch off the flame and keep it to cool. Once the pressure is released, mash the vegetables. Keep this aside.

Blanch green peas with some salt and keep aside.

Now make masala/gravy for bhaji/vegetables.

Take some butter and  oil in a pan. Put ginger garlic and chilli paste. Saute well.

Next add chopped onions sauté till it becomes translucent. Add salt at this stage as this will cook onions faster and give it a nice light brown colour.

It’s time to add kashmiri red chilly powder, coriander powder,  pav bhaji masala, and turmeric powder. Give it a gentle mix.

Mix grated tomatoes into onions and cook well till oil separates from the masala. Keep this aside.

Take previously made mashed vegetables and mix into this onion tomato masala.

 Saute on high flame for few minutes. Now you can add blanched green peas at this stage, i haven’t as i added it into pressure cooker along with all the vegetables. Mix well.

Add lemon juice and switch off the flame. Your Pav bhaji is ready.

For making Bruschetta

Preheat the oven for 10 minutes on 180 degrees.

Cut the garlic bread into bruschetta size pieces.

Apply butter on every piece of bread. First bake this for 10 minutes. Remove and top each piece with pav bhaji. Cover it with mix of  processed & mozzarella cheese.

 

Grill the all pieces of bruschetta for about 5-6 minutes.

Garnish the bruschetta with finely chopped onions, coriander leaves and some lemon.

Serve this hot.

Notes :

You can use any bread loaf for making Bruschetta. It can be a  simple baguette, a french loaf or even pav/ dinner rolls.

For making pav bhaji Bruschetta you need to keep the consistency of pav bhaji a bit thicker than usual one.

You can use leftover pav bhaji to make this bruschetta.

Ingredients

For Pav bhaji

  • Onion 1
  • Potato 1
  • Cauliflower 1/4 cup
  • Cabbage 1/4 cup
  • Grean peas 1/4 cup
  • Capsicum 1/4 cup
  • Bottle gourd 1/4 cup
  • Green peas/matar shelled 1/4 cup
  • French Beans 1/4 cup
  • Carrots 1/4 cup
  • Tomato 1
  • Turmeric powder 1/2 tsp
  • Red chilly powder 1 tsp
  • Pav bhaji masala 1 tbsp
  • Ginger garlic minced 1 tbsp
  • Cooking oil 2 tsp
  • Salt according to the taste
  • Cumin seeds 1 tsp
  • Green chilly Chopped into small pieces 1 piece
  • Butter 2 tbsp

For bruschetta

  • Garlic bread 1 loaf
  • Mozzarella cheese + Processed Cheese grated 1/4 cup
  • Butter as required to apply on garlic bread pieces

For garnishing

  • Coriander Chopped handful
  • Onion chopped finely 1
  • Lemon wedges few
