Ingredients required to make Guacamole
Avocado – Use ripe but firm
Onions – Use red onions
Tomato – De seed and use as no one wants to have watery guacamole
Lemon juice – Freshly squeezed
Fresh coriander leaves/Cilantro -Adds so much freshness
Green chili – Preferably use light green chili
Salt – To taste
Red chili powder – Adjust the quantity as per your preference

Slice one ripe avocados in half, remove the pit and scoop out the flesh into a bowl.
Then use a fork/spoon to gently mash avocado to your desired level of chunky or smooth consistency. Add fresh lemon juice and mix well.
In a bowl add diced red onions, tomato, green chilli, coriander, salt, red chili powder and mix together.
To this add mashed avocado. Stir and combine everything together. Taste the test and adjust lemon and salt accordingly.
That’s it. The most delicious, easy guacamole is ready to serve.
How to store leftovers and keep the green colour intact
Due to avocado, guacamole gets oxidised pretty soon. However, the lime juice help to slow down the process, but it will eventually start to brown.
I stumbled upon this whilst looking for how to keep Guacamole green and I must say it’s a brilliant idea.
Notes
1. Avocado turns black very soon once it’s peeled. To avoid from it turning black, store it in an airtight container or wrap a cling film over it.
2. Serve the Guacamole immediately. If making a few hours ahead, wrap with cling film on the surface of the guacamole and press down to cover it to prevent air reaching it.
3. I would recommend that you add chopped tomatoes to your Guacamole just before serving as chilling tomatoes change their flavor profile.
