Try this simple, easy to cook dish Gawar ki sabzi recipe | Cluster beans curry | Gavarfali ki sabzi recipe my way with garlic, tomatoes and some simple basic spices. It is Gluten free and vegan too.

Serve it along with Masoor Dal Tadka, Vegetable raita, Kachi kairi ki chutney and hot, ghee laden chapati for a perfect afternoon meal. We Sindhi’s call this Chithyal gwar, means mashed gwar.

However, we love not to have our gawar sabzi mashed, so I have prepared it without mashing it.

 

 

Gawar ki Sabji is a simple dish which goes well with chapati/ Roti or even rice. The addition of garlic and combining it along with tomatoes and simple spices makes this dish delectable.

Though cutting gawar I find a bit time consuming, but the it’s worth the effort. And also it doesn’t need too many ingredients.

I always prefer to make it in a kadai/pan however it can be cooked in pressure cooker to fasten the process.

Pressure cooking reduces the cooking time and gets done in no time from start to finish. Today I will be sharing both methods to make gawar.

Ingredients
  • Gavar/guvar/Gwar/cluster beans - 250 grams
  • Potato - 1 small
  • Green chillies - 2
  • Ginger - ½ inch piece
  • Garlic cloves - 6
  • Tomatoes - 2
  • Salt to taste
  • Turmeric/haldi powder - ½ tsp
  • Red chilli powder - 1 tsp
  • Coriander/dhania powder - 1 tsp
Instructions
  1. Gawar in kadai/pan :
  2. Clean wash and chop gawar/cluster beans/guvar/gwar.
  3. For that first snip head and tail of it and then cut it into almost ½ inch pieces.
  4. You can do this process by taking 4 to 5 gavar pieces at a time.
  5. Chop potato into small pieces. Keep aside.
  6. Grate tomatoes and mince garlic, ginger & chillies.
  7. Once done with all gavar, put kadai on gas stove by adding little oil and heat it.
  8. To this add minced garlic, ginger & chillies. Saute till raw flavour of garlic goes away.
  9. Next add potato pieces and gavar to this.
  10. Mix it nicely and add above mentioned spices and salt to taste.
  11. Lower the flame and cover and cook it till it turns tender. In between keep adding water little by little and stir gently.
  12. As soon as the gavar & potato turns tender add grated tomatoes and cook well.
  13. Switch off the flame once everything is cooked well.
  14. It's ready. Serve it with hot fulka or chapati.
  15. Pressure cooker method :
  16. In a pressure cooker add water and chopped gavar and potato. Let it cook upto 2 whistles. Switch off the flame.
  17. Once the pressure is released drain water from it and keep it aside in a sieve.
  18. Heat kadai on gas stove by adding little oil.
  19. Add minced garlic, ginger & chillies. Saute till raw flavour of garlic goes away.
  20. Next add boiled gavar and potato to this. Mix it nicely and add above mentioned spices and salt to taste.
  21. To this add grated tomatoes and cook well.
  22. Once everything is mixed properly switch off the flame.
  23. It's ready. Serve it with hot fulka or chapati.
