This eggless banana walnut bread | Vegan banana bread is made using overripe bananas, maida (all purpose flour) and walnuts.
The recipe to make eggfree banana bread is pretty easy, it turns out light, soft, moist and perfect.
Made with few handy Ingredients from kitchen pantry, this makes for a tastiest bread recipe I have ever made.
It turns out to be sweet, moist and fluffy, a perfect breakfast/snack recipe which everyone would love to have.
Similarly, Eggless Banana Chocolate cake and Eggless Banana Chocolate mug cake, which i made earlier, turned out to be one of our favorite cakes.
No special Ingredients to make Eggless Banana Walnut Bread | Vegan Banana Bread
There are no special ingredients required for this recipe — all you’ll need is mashed ripe bananas, flour, flavour less oil, sugar, baking soda, baking powder and walnuts.
With these handful of Ingredients and few minutes of preparation, I assure you, you are going to buy extra bananas next time, just to make this wonderful recipe.
This easy Banana Bread recipe is a no fail, my super favorite and comes out perfect every time!
It’s the recipe that comes to my mind first when I have some leftover brown spotty bananas sitting on the kitchen counter. This is the best ever banana bread recipe and if you haven’t tried it yet, now’s the time.
Variations of Eggless Banana Walnut Bread | Vegan Banana Bread
This banana bread has a very special place in my heart as this was my Mom’s favourite. However she always made this with eggs and didn’t use walnuts.
As I wanted to make this eggfree and vegan, I chose the Ingredients accordingly.
Since bananas are already the hero Ingredient of the recipe here, I modified banana bread recipe eliminating eggs by adding more mashed bananas and some vegan milk to it.
The batter of the bread comes together beautifully and the bread turns out how you want it to be.
I somehow love the combination of banana and walnuts, so i add chopped walnuts to this bread. If you don’t like to add nuts, leave them out!
Another variation is to add chocolate chips and make chocolate chip banana bread.
Why we love this bread
This bread is pretty quick to prepare, you will probably finish mixing everything before your oven even finishes pre heating.
So let’s get back to the recipe, without much further ado.
Step by step instructions and pictorial presentation to make Eggless banana walnut bread | Vegan banana bread
Pre-heat oven to 180 ° C. Brush a 10 x 5 inch loaf pan with oil, dust some flour and lay a parchment paper at the bottom of pan.
In a bowl sift together flour, baking soda, baking powder and salt at least 3 times. Set aside.
In another bowl, mash the bananas using a masher or a fork. You should have around 1 cup mashed banana.
Add the sugar to the mashed banana and mix using a whisk until combined.
Then add the vanilla, oil and mix.
Start adding the flour mix in batches.
Then add coconut milk. Check the batter consistency. You can add additional tablespoon of milk if the batter looks too thick.
Do not over-mix the batter. Coat the walnuts with flour so that it would not sink in the batter while baking.
Add in flour coated walnuts and fold them into the batter using a spatula.
Pour batter into the prepared loaf pan. Sprinkle some chopped walnuts all over.
Bake at 180 degrees for about 50 to 55 minutes until a toothpick inserted in the center of the bread comes out clean.
Every oven is different so the temperature may vary. Keep an eye on the bread after 45 minutes.
Cover the bread with an aluminium foil after 30 minutes to prevent excessive browning on the top.
Remove it on wire rack to cool down completely. Slice and enjoy this delicious banana bread in breakfast or as a snack.
Notes
1. You may use regular dairy milk for this recipe, the recipe just won’t be vegan then.
2. To store eggless banana walnut bread, cover the leftover bread and keep at room temperature. It will last 1 to 2 days.
3. You may keep it in the refrigerator for up to 1 week. Just warm it up in the microwave for few seconds before serving.

Ingredients
Measuring cups used, 1 cup = 250 ml
Dry ingredients
- All purpose flour 1.5 cups
- Baking soda 1 tsp
- Baking powder 1 tsp
- 1/4 teaspoon salt
Wet ingredients
- Bananas mashed 2-3 around 1 cup
- Brown sugar 3/4 cup I used light brown sugar
- Vanilla extract 1 tsp
- Oil 1/3 cup I used canola oil
- Coconut Milk 1/2 cup
- Walnuts chopped 1/2 cup
