A quick and easy recipe for homemade dry fruits energy bar | Protein bar recipe is made with dates, mix dry fruits, seeds and nuts.
These bars hit all the right notes with visible nuts, seeds and just a touch of mild sweetness, plus looks attractive too.
This energy bar can be an ideal snack post your workout sessions or you can serve it as a quick snack to your kids post their sports activities.

This turned out non sticky and no crumble as got the right ratio of 1:3, where 1 is the dates content and 3 for the nuts and other dry mix. In addition to that this recipe is made without using any oil, ghee, sugar and jaggery.

With the influence of neighbouring countries cuisines resulting in fusion recipes, our humble Chikki/patti got makeover, to be known as Dry fruits energy Bar recipe | Protein bar recipe.
Variations
There isn’t any hard and fast rule to use the specified combination of dry fruits. You can use any choice of nuts. Add or omit as per your preference.
You can shape these into laddu also. I have shaped these like a bar, to have authentic protein bar look.

It includes Easy kalakand Recipe, No fail Karachi halwa recipe, Boondi Ladoo, Sweet potato/Shakrkand ke gulab jamun, Coconut peda and Mango ladoo.
Step by step instructions and pictorial presentation to make recipe
Deseed, clean and wash dates in a bowl. Soak it for few minutes so that impurities can be removed easily. Drain and rinse and place it in a bowl. Keep it aside for later use.
In a pan take cashew, almonds, walnut and pistachios. Dry roast them on low flame until the nuts turn crunchy. Remove and keep it aside to cool in a bowl. Grind it to a coarse powder.
Next dry roast all the seeds one by one. Take it out and keep aside.
Dry roast oats – muesli – cornflakes mix on low flame for few minutes. Remove and keep aside.
Further add dessicated coconut and dry roast. Transfer this to a bowl and keep aside.
In the same pan take dates and saute on medium flame. Cook until the dates softened.
To this add all previously roasted ingredients. Add salt, dried cranberries, honey and mix well making sure everything is combined well.
Prepare the tin by laying parchment paper at the bottom. Or you can grease the tin by brushing some butter.
Transfer the prepared mixture into a greased tin. Flatten it with the help of back of steel plate/bowl as shown in the picture.
Sprinkle some pumpkin seeds and cranberries and press them slightly.
Keep it in the refrigerator to set for atleast 2 hours.
Cut them in square or rectangle shape. Serve immediately or store in an air tight container in the refrigerator for upto 2 weeks.
Recipe Notes
Any dried fruits or nuts of your choice can be used, just keep the final measurements ratio same as mentioned.
Make sure to place a parchment paper at the bottom of the tray or grease the tray with butter, else the protein bar will stick to it.
Always dry roast the oats and nuts for better taste, crunch and flavor.
Dry roasting of ingredients increase the shelf life of protein bar.

Ingredients
- Dates / khajoor pitted 1 cup
- Oats, muesli, cornflakes mix 1/4 cup
- Almonds / badam 1/4 cup
- Pistachios/pista 1/4 cup
- Cashew/kaju 1/4 cup
- Walnut / Akhrot 1/4 cup
- Muskmelon Seeds 1/4 cup
- Watermelon Seeds 1/4 cup
- Pumpkin seeds 1/4 cup
- Sunflower seeds 1/4 cup
- Dry cranberries 1/8 cup
- Raisin - 1/8 cup
- Dry dessicated coconut 1/2 cup
- Honey 1/2 cup
- Salt 1/4 tsp
Instructions
