Butterfly pea flower Lemonade | Shankhapushpi Lemonade | Aparajita Lemonade is commonly known as Blue Tea.
It is a herbal tea, that is caffeine free, also known as tisane, beverage made from a decoction or infusion of the flower petals like Hibiscus flower tea.
Butterfly pea flower Lemonade | Shankhapushpi Lemonade | Aparajita Lemonade is just 4 ingredient recipe, easy to make, vegan, gluten free drink made using butterfly pea flower, simple sugar syrup and lemon.
To make this tea, fresh or dried leaves of butterfly pea flower/Clitoria ternatea plant are seeped in water.
After that lemon and some sweetener is added while serving it as a Lemonade.
Adding lime juice changes the PH of the drink which causes the color to change from deep blue to purple or even red.
Butterfly pea flower Lemonade, is it for real?
Butterfly pea flowers are beautiful blue color bell shape flowers which are edible.
It has amazing beautiful royal blue color with natural earthy taste and no bitterness at all.
I have mentioned earlier also that my club has amazing collection of flowers. Upon seeing these in full bloom, I jumped with joy, and decided to go ahead using it to make Lemonade.
Moreover, these flowers can also be used to make Iced Tea, Cocktails and Mocktails. It can be consumed as a hot tea also.

How to make Butterfly pea flower Lemonade
This lemonade is made by infusing the flowers of the Butterfly Pea plant in hot water.
Here I have used fresh flowers, so removed the green stem and leaves, as if left on they will turn the tea a little bitter in taste.
If using dried flowers then you can omit this step and directly drop them into hot water.
To begin making lemonade, heat water in a sauce pan.
Pour the hot water over the butterfly pea flowers.
Let them steep for no longer than 3 to 4 minutes. The color of the water will turn royal blue in color.
Add simple sugar syrup or powdered sugar as required and stir well.
Now strain the tea and let it cool down completely. At this stage, if you wish to have the it as warm tea, there is no need to cool it down. Serve it right away.
But since we will serve this as lemonade, hence keep it in the fridge to chill further for few hours.
Once the blue tea is cooled, add lemon juice in it and you will see the magic, the color of blue tea will turn to purple/violet.
Pour into serving glasses with plenty of ice and lemon slices in it.
Add some fresh butterfly pea flower petals as garnish and serve chilled.

- 1/2 tsp Lemon Juice

I wish I could get some butterfly pea flowers. During our stay in Thailand this was my afternoon drink every single day. The first time I had it was so intrigued by the colour and flavour. Easy to make and its so refreshing. Amazing how the blue colour turns lavender pinkish colour.
