Chicken Seekh kabab Recipe | Chicken keema kabab , make at home
We used to frequent this particular and very famous restaurant in Mumbai that served these mouth watering Kababs.
We really missed them during this lockdown period. So I decided to try my hands making chicken keema kababs at home.
After taking pro tips from a dear friend Samina to make it perfect, here’s a no fail recipe towards perfect seekh kababs.
According to her what matters is not only the ingredients used but also the procedure to cook them. Follow these tips to make the chicken seekh kabab super soft and juicy.
First and foremost is Chicken Keema or chicken mince with fat that is essential to prevent the kababs from getting stiff.
Egg is the binding agent and makes the skewers so tasty.
Bread Crumbs a good binding agent and adds volume.
I made Chicken seekh kebabs using minced chicken breast making them more delicious. I also cooked them in Pan instead of grill. The kebabs were superb in taste and so quick to make.
Serving suggestions
Serve this as starter, snack or an appetizer and enjoy with spicy green chutney.
Stuff these in chapati/roti along with some onions, sprinkle chaat masala and drizzle some green chutney over this to make a quick grub.
So if you ever had issues with your Kababs being dry or not being juicy enough or lacking that seekh kabab punch?
Learn how to make the best chicken seekh kabab step by step on a tawa/griddle or in a pan.
Wash, clean and drain the chicken keema well. Then squeeze it gently to remove the excess water.
Give it a pulse once in the mixer. Remove and place a cotton cloth underneath to soak excess water.
After a while, in a mixer grind chicken meat, ginger garlic paste, chillies, turmeric, red chilli powder, lemon juice, pepper powder, cumin powder, garam masala, chaat masala, coriander seeds and salt to a smooth paste.
To this, add onion paste, bread crumbs, fresh coriander & mint leaves, egg yolk and white of the egg, and grind again. Add soaked saffron strands to mixture, mix well and set aside in a fridge for one hour.
Remove and smoke the meat with hot coal by placing it in a bowl in the centre.
Pour ghee over the hot coal and cover with lid or foil so that smoke shouldn’t escape. Let it remain for a while and take out the bowl. Keep it aside.
Meanwhile soak the wooden skewers in water for about 20 minutes.
This step will prevent it from burning while you cook the kababs. Remove and wipe them dry.
Grease the skewers then divide the mixture into equal portions and spread each portion onto a skewer creating a uniform shape around each skewer wrapping it tight.
Cook kebabs on a slightly greased frying or grilling pan on medium heat for 10-12 minutes, keep turning in between.
Serve them with Onion rings, salad, lemon and Chutney. Enjoy these quick, juicy and delicious kebabs which are ready to serve in no time.
