Vegan Black Sesame Pudding
Ingredients
Method
- To begin with, grind unsalted dry roasted peanuts to make a fine powder. Keep aside. Next, grind the sesame seeds along with 1 tsp Brown sugar to make a fine paste.
- Heat water in a pan, add salt. To this add paste of black sesame seeds. Mix well. After that, add peanuts powder.
- Bring the sesame-nut water to a rolling boil, then reduce the heat. Simmer this mixture for 5-8 minutes.
- Once done, add the remaining sugar, vanilla essence and coconut milk. Gently simmer this on low heat.
- Meanwhile mix arrowroot powder and water. Add this paste to sesame mixture.
- Make sure to stir continuously as the dessert should thicken within a minute or two. Its ready. Pour into bowls or dessert cups while still warm.
- Serve with (purely optional) swirl of coconut cream/milk or shredded coconut.
- Enjoy.
Notes
1. You may replace peanuts with almonds, cashews, or other nuts of your choice. 2. You may garnish this pudding with dry shredded coconut. 3. You may strain Balck sesame pudding to get rid of the little bits of nut and sesame. 4. This dessert is normally served warm, but it is also very good eaten cold on a hot summer day. 5. To store, keep the pudding in a covered container in the refrigerator for up to one week. Reheat before serving.
