Watermelon and its many uses
Yes… Watermelon can be used to make sabzi too apart from eating it only as a fruit. Rajasthani food is as vibrant as their culture.
I happen to have relished this sabzi during my holidays to Rajsthan many years ago. And after that, I am beginning to see the Watermelon in a whole new light.
This summer when watermelon is found in abundance, I decided to make the same curry that I had once tasted in Rajasthan. After going through many recipes for the same, I tweaked this recipe, the way my family loves it.
A must try Rajasthani Tarbooj chana sabzi | Watermelon Chickpeas curry
The Watermelon & chickpeas/chana Curry Recipe is one of those dishes that you must try when watermelons are in season.
This watermelon curry is subtly spiced, which bring out refreshing flavors and taste. I must admit that I have started to admire Rajasthani cuisine for it’s inventiveness.
I am amazed to see the use of dried lentils, beans, milk and buttermilk that is common in cooking. The way they use Oil and red chillies that helps preserve the food and reduces the need for water.
How to make watermelon and chickpeas/chana curry :
Take 1 cup of chopped watermelon and blend it to make puree. Set it aside.
Heat a kadai/pan on medium heat, add 2 oil and add mustard seeds/rai. Once it crackles add cumin seeds.
Now add whole chili, crushed ginger, garlic, red chilli powder, turmeric powder and few curry leaves.
Saute and add the boiled chick peas. Turn down the heat and mix everything well.
Add the watermelon puree and season it with salt.
To this add cumin powder & garam masala powder.
Mix it well and let it cook on medium heat for about few minutes until the sauce starts to thicken.
Then add 1 cup of cubed, big Watermelon chunks. Mix well and cook for another few minutes. Test the taste and adjust the seasoning.
Serve this hot with naan/roti/chapati or rice.

- Oil - 2 Tbsp

Wow, I’ve heard of watermelon curry but have not tasted it or tried it at home. Have used the watermelon rind to make a curry. With chickpeas, I definitely will have to give this tempting and delicious looking Rajasthani Tarbooj Chana Sabzi a try.
