Paneer ke Ande | Paneer eggs in gravy | Vegetarian Egg curry with detailed instructions.
The recipe that I’m sharing today is completely vegetarian made with cottage cheese/ paneer. To make fake eggs, paneer is shaped like an egg, and is served in onion tomato gravy.
Vegetarian Egg Curry sounds cool na😃 when I heard about this for the first time from a friend, who is a vegetarian, I was pleasantly surprised.
My friend recommended to refer the recipe from here. I followed this recipe and it came out pretty well.

Ingredients :
For making cottage cheese/ Paneer eggs :
Grated paneer 1+ 1/4 cups
Turmeric powder/haldi 1/4th tsp,
Corn flour 2 to 3 tbsp,
Oil 1tsp,
Salt to taste
For making gravy:
Oil ¼ cup,
Bay leaf / tej patta 1
Cinnamon stick 1
Green cardamom 1
Cloves 4
Cumin seeds/ Jeera: 1 tbsp
Kashmiri lalmirch powder 1 tsp
Finely chopped onions 1 cup
Ginger Garlic paste 2 tsp
Puree of 2 tomatoes
Turmeric powder 1 tsp
Red chilly powder 1 tsp
Coriander powder 2 tsp
Dry mango powder 1 tsp
Garam masala powder 1 tsp
Salt to taste
water as required
Instructions to make Paneer ke Ande | Paneer eggs in gravy| Vegetarian Egg curry
For making paneer eggs—
Take 1/4 cup grated paneer, mix turmeric powder and salt.
Mix everything nicely and make 6 small balls like egg yolk.
Now take a bowl add 1 cup of grated paneer, corn flour, some salt into it`
Mix and knead it like dough.
knead it for almost 5-6 minutes till paneer becomes smooth and lump free.
Divide it in six portions. Roll each ball to disc shape.
Put small yellow ball (yolk) in the center.
Cover with the part from all the sides.
Roll with your palms and give it an egg shape as shown in the video.
Heat very little oil in pan and put the eggs in the pan to shallow fry them.
Drop little oil on the eggs too.
Turn it few times up and down side and cook till they are golden brown from all the sides.
When eggs are ready take them out in a plate and let it cool down.
Once it cool down cut into two halves..
For making Gravy—
In a medium hot pan heat oil.
Add cumin, a bay leaf, cardamom, and cinnamon stick. Stir it well.
Now add Kashmiri chilli powder. Stir and add finely chopped onions.
Reduce flame and saute onions for almost 10 minutes.
Now add salt and saute for few minutes so onions get cooked evenly. When oil starts separating out from the onion, mix in tomatoes puree.
Add basic masalas i.e. red chili powder, coriander powder and turmeric. Mix few drops of water so that masala do not burn.
Cook masala & onions till oil separates from it.
Mix in required water to adjust the consistency of the gravy. Keep it to simmer for few more minutes.
After almost 10 minutes switch off the flame, add garam masala powder and aamchoor powder.
For Serving—
In a serving dish place paneer eggs and pour hot gravy over them slowly. Paneer egg curry is ready to serve.
Serve it hot with chapati, parathas or naan..

Heard about paneer eggs before, though never bothered to know the process. Honestly this recipe sounds delicious and very creative idea, specially it is interesting idea to feed kids who doen’t like paneer.
