Paneer Jalfrezi|Restaurant style Paneer Jalfrezi recipe is an Indian style, quick, easy, stir fried side dish, made with paneer and vegetables, that gets ready in just 15 minutes.
On regular weekdays we like to eat simple, quick and easy to make food like –
Palak Chana dal/sai bhaji along with Dal tadka, Vegetable Raita, and some Pickle.
On weekends we like to have some elobrate lunch like Paneer ke ande, Sindhi Kadhi and some Fruit custard to complete the meal.
Ideal side dish to serve to your guests
Paneer Jalfrezi is one recipe that is highly customizable, easy and quick to make, looks very appealing, is nutritious making it perfect for busy days.
I always make it for my guests who are vegetarian and always get rave reviews about it.
What goes into making Paneer Jalfrezi
I have used paneer/cottage cheese, capsicums, onions, tomatoes, ginger, garlic, green chillies and some basic spices to make this delicious stir fry sabzi.
Make this using whatever vegetables available in your kitchen pantry like carrots, red and yellow bell peppers, some sweet corn or baby corn.
How to make Paneer Jalfrezi recipe|Restaurant style Paneer Jalfrezi recipe
First of all prep your paneer & vegetables by chopping them all in length wise. This will give the dish a uniform look.
Mince ginger garlic chillies. Keep it aside.
Heat oil in a wide non stick heavy bottom pan. Once it is warm add cumin. As it starts to splutter add dry red chillies.
To this add minced ginger, garlic & chillies. Saute it for a while.
Next add sliced onions and salt. Saute it for a minute and add sliced tomatoes.
Saute on high heat stirring constantly. Add all masalas/spices mentioned above in the list. Once tomatoes are bit tender, in goes slices of capsicums.
Stir them well and add tomato ketchup/sauce (secret tip). This will bind all the vegetables well and add that zing to the dish.
Crush the kasoori methi in between your palms and add it in the tomato masala.
Check seasoning and adjust accordingly. Add the paneer slices and give a gentle mix. Saute this for 1-2 minutes.
In the end, add fresh cream(purely optional) as this will give a shine & bind everything together.
Garnish with chopped coriander leaves and serve hot.
Notes :
This is a stir fry dish so you need to try and keep the veges crisp and not overcook them.
