Gobhi aloo Dhaba style|Aloo Gobi fry is a delicious, stir fry sabzi that is cooked in dhaba style.

A very famous, vegetarian stir fry side dish, indian style sabzi Gobhi Aloo Dhaba style|Aloo Gobi fry is no onion, no garlic, gluten free, served on Dhabha’s in North india.

Dhabas are roadside eateries on highways. The food served at Dhabas is in traditional style and always prepared fresh when ordered.

Most of the dhaba recipes are good on taste, simple, moderately spicy, and are not very fancy or complicated as compared to the recipes served in hotels. Because they use local, fresh, seasonal produce.

Gobhi Aloo Dhaba style | Aloo Gobi fry, a vegetarian’s delight

A Gluten Free, Vegan, no onion, no garlic dish made with gobhi aka cauliflower, aloo/potato and some basic spices is truly a vegetarian’s delight. In conclusion, a simple yet delicious recipe that is easy to make.

Similarly Kaju karela no onion no garlic and Besan wali Shimla Mirch aloo sabzi are quick and delicious sabzis worth trying.

Gobhi Aloo my way

This recipe is a most popular dish of North india. We are going to make the simple yet delicious dry sabzi, the way they make this dry and fried way in Dhaba’s (road side eateries).

The sabzi served in Dhaba’s is made by shallow frying cauliflower and potatoes and then mixed with some spices.

However this sabzi is made in several ways but what I am going to share today is my favorite way of making Aloo gobhi.

In other words, this is a simple yet delicious recipe. Serve it with a fulka, chapati or paratha, Salad and Masoor dal tadka for best taste.

Gobhi aloo is a good  lunch box or kids tiffin box option as this is very easy to put together. In addition, it’s a wonderful side dish and ideal for serving it to vegetarians.

Step by step instructions and pictorial method to make Gobhi Aloo Dhaba style | Aloo Gobi fry

Clean the cauliflower throughly discard the thick stems and check for any worms. Cut the medium size florets and immerse it in pot full of salted warm water. Keep it aside for 15 minutes.

Wash it again with plain water and spread on a kitchen towel to absorb the excess water.

 

Peel and chop potatoes in big cubes. Immerse the potatoes in salted water as well.

After 15 minutes heat Oil in pan. Add drained potato cubes, saute them. Cover and cook on low heat. Sprinkle salt over it and cook till you get golden edges. Check with knife if it’s done.

Remove potatoes on a plate. In the same pan put cauliflower florets and first cook it in high heat. Once it achieves light golden brown colour, add salt and then cover and cook it on low heat.

Check if it’s done, drain it on paper towel and keep it aside.

After that mix shallow fried cauliflower and potatoes in the same pan. Mix in all dry spices except garam masala, put ginger and chillies too. Mix everything.

 

Add grated tomatoes and let it cook for 5 to 7 minutes. Once the water from tomatoes have evoparated, mix gently everything together. Put the lid on and let it cook for 2-3 minutes.

Open the lid, by now everything is nearly cooked, let all the moisture evaporate.

Lastly Garnish with Coriander leaves n sprinkle a pinch of Garam masala on top.

Serve hot with Ghee waali Garam Rotis or paranthas.

  • Cauliflower 1 big sized (500 gms)
  • Potatoes 2
  • Tomatoes 2 grated
  • Ginger 1 inch piece grated
  • Green chilli 1
  • Oil 3 tbsp
  • Salt to taste
  • Coriander powder 1 tbsp
  • Turmeric powder ½ tsp
  • Red chilli powder 1 tsp
  • Garam masala ½ tsp
  • Fresh coriander leaves 2 tsp
