This simple to make vegan and gluten free, customisable, full of flavour easy winter salad recipe combines regular salad vegetables mix, wonderful spice mix and a delicious dressing all tossed together.

Easy Winter Salad Recipe
Ingredients
Salad veges
- 1 Carrot
- 1/2 Radish/Mooli
- 1 Boiled Beetroot
- 1 Cucumber
- 1/4 cup Spring onions green
- 1 Green chilli
- 1 tbsp fresh coriander leaves
To make Aachar/pickle masala
- 1 tbsp mustard seeds Sarson
- 1 tbsp Carrom ajwain seeds,
- 2 tbsp saunf Fennel seeds
For Salad Dressing
- 1 tbsp lemon juice
- 1/2 tbsp olive oil
- 1 tsp mustard sauce
- 1 tsp Maple syrup
- 1/2 tbsp salt
Instructions
Make Aachar/Pickle masala powder
- To begin with let's first make pickle masala. For that heat a thick bottom pan. To this first add Mustard seeds. Roast them on slow flame for a few minutes and take out in a plate.
- After that in the same pan add fennel seeds. Roast on slow flame and take out. Next, roast carrom seeds and take out.
- Once cooled down, mix together, coarse grind it in mortar pestle. Keep it aside foe later use.
For Salad Dressing
- In a glass bottle mix olive oil, mustard sauce, maple syrup, salt and olive oil. Give it a good shake.
Chop salad vegetables
- It's time to cut salad vegetable. Chop carrot, cucumber, radish, beetroot, green chili and spring onion greens in long batons.
- Now sprinkle 1 tbsp pickle masala over the prepared Salad and pour the salad dressing as required.
- Serve immediately. Enjoy......

1. You may use any salad vegetable of your choice.
2. We all love having this salad as a side for lunch sometime topped with some protein.
