I have learnt this recipe from one of my friends who is Dietician. Since then i am hooked on to this yummy soup.

The only one category in indian cuisine can really fit for the description of soup are many regional variations of it. The soup is made from cooking pulses, variously known as saar, shorba, sarki, or Rasam.

According to Dairy council of Virginia broccoli is an all-star food with many health benefits. In addition it’s low in calories & rich in essential vitamins and minerals.
According to Wikipedia Broccoli means “cabbage sprout” and gets its name from the Italian word “broccolo”.
Easy Broccoli potato spring onion soup | Broccoli soup in pressure cooker
To make this hearty and nutrients rich soup, broccoli stem is cooked together with potatoes, spring onions and garlic in a pressure cooker. Then it is blended with milk and seasoned with salt and pepper.
The florets of broccoli and stem is cooked separate so as the florets won’t overcook and stem will cook till it’s soft and tender.
Sauteed bright green broccoli florets float prettily in this hearty soup, but it’s broccoli stems that do the real work. It forms a creamy base for the soup.
Try this healthy broccoli soup alongside some sandwiches or serve for a simple dinner.
Method to make Broccoli potato spring onion soup | Broccoli soup
Wash & clean broccoli. Keep the top florets separate in a bowl. Cut the stems in dices.
Chop the spring onion. Keep the green part of spring onion to be used later along with florets.
Peel and chop the potato.
Put stems of broccoli, potato, garlic, and white part of spring onion and water in a pressure cooker.
Cook for about 2-3 whistles. After that let it cool and pulse it in mixer. Add Almond milk to it. Pulse it again to make a nice smooth paste.
Transfer the soup to a pan and warm it over medium flame. Adjust the seasonings.
Broccoli soup toppings:
To make soup toppings saute some broccoli florets first in olive oil. Next add green part of spring onion. Saute everything for a while.
Thereafter pour piping hot soup in bowls or mugs.
Garnish with sauteed spring onion greens & broccoli florets.
Serve hot.
Other Vegan milk option :
To make this soup you may add dairy free milk like Coconut milk or Soy milk.

- Almond Milk ½ cup or more
- 1 tsp olive oil
- Salt and pepper powder
