Broccoli potato spring onion soup is made with just 7 ingredients, is delicious, a beautiful blend of potato and spring onions. It's very filling, easy to make and is light on stomach too

Ingredients
  • 100 grams of Broccoli
  • 2-3 spring onions
  • 1 small potato
  • 3 garlic cloves
  • Almond Milk ½ cup or more
  • 1 tsp olive oil
  • Salt and pepper powder
Instructions
  1. Wash & clean broccoli.
  2. Keep the top florets separate in a bowl. Cut the stems in dices.
  3. Chop the spring onion.
  4. Keep the green part of spring onion to be used later along with florets.
  5. Peel and chop the potato
  6. Put stems of broccoli, potato, garlic, and white part of spring onion and water in a pressure cooker.
  7. Cook for about 2-3 whistles.
  8. After that let it cool and pulse it in mixer.
  9. Add Almond milk to it. Pulse it again to make a nice smooth paste.
  10. Transfer the soup to a pan and warm it over medium flame. Adjust the seasonings.
  11. Broccoli soup toppings:
  12. To make soup toppings saute broccoli florets first in olive oil. Next add green part of spring onion. Saute everything for a while.
  13. Thereafter pour piping hot soup in bowls or mugs.
  14. Garnish with sauteed spring onion greens& broccoli florets.
  15. Serve hot.
