Strawberry Cheesecake Cupcakes or pretty pink cheesecake cupcakes is the perfect recipe for any occasion. As we approach Women’s Day and this recipe is an ode to the Feminine Force around us.
Why I chose this recipe to celebrate Women’s day, because It’s mini version, cute looking, easy to make, no bake, and moreover, it’s a combination of two of my favorite things – Strawberries and Cheesecake.
Strawberry Cheesecake Cupcakes, mini cheesecakes, a good option :
I love making cheesecakes. My recipe of Hung curd cheesecake and Virgin Pinacolda no bake cheesecake is loved by my folks immensely.
I find it much easier to make mini cheesecakes as it controls the portion size, which sometimes we tend to go overboard.

Step by step instructions and pictorial presentation to make strawberry cheesecake cup cakes
For Bottom Layer :
Mix in the melted butter with grinded biscuits. Line the base of the moulds evenly and smoothly with the biscuit mixture. Put in the freezer to set.
( You can use paper cups for making it and once it is set, remove the paper cup gently. )
Middle Layer:
Puree the strawberries and sugar together in a mixer grinder. Divide it into two equal portions.
Add the hung curd and cream cheese to the one portion, and blend well to make a smooth mixture. Pour it into a bowl.
Add dissolved gelatin slowly into the strawberry mixture. Keep stirring continuously.
Now pour this strawberry mix onto set biscuit base. Put in the fridge to chill for 5-6 hours at least or overnight.
Top Layer :
Now add gelatin again into leftover strawberry puree and mix.
Pour this mix over the set mixture to make the top layer and again let it set in fridge for few hours.
Garnish with strawberries and Enjoy.

- Marie biscuits - 1 pack
