This ice cream needs only 4 ingredients –Whipping Cream , Condensed milk , Coconut Meat and Coconut Water. Since it’s just 4 ingredients, and involves tender coconut we make sure you use fresh and the best quality.

This homemade 4 Ingredient Tender coconut ice cream (Naturals style) is a delicious gluten free dessert made without an ice cream maker.

Ingredients

  • 1+ 1/4 cup tender coconut meat, chopped (reserve 1/4 cup for adding later)
  • 1/2 cup tender coconut water
  • 1+1/2 Cup Whipping cream
  • 3/4 cup Condensed Milk

Instructions

  • Firstly to make this ice cream place the stand mixer blades and mixing bowl in the freezer for making whipping cream.
  • Then, blend chopped tender coconut meat (reserve 1/4 cup for adding on the later stage) and coconut water together in a mixer grinder to make smooth paste/puree. Keep it aside.
  • To whip cream, remove the bowl and blades from the freezer.
  • Pour chilled whipping cream to a bowl and whip till it forms stiff peaks.
  • Once done, add condensed milk and whisk again.
  • Now add prepared tender coconut meat -coconut water paste.
  • Mix with blender for a second to combine it well.
  • Pour the mixture in the rectangular or any mould, spread reserved chopped coconut meat, cover it tight with cling film.
  • Freeze it for minimum 8-9 hours or overnight.
  • Easy to make, delicious and  refreshing Natural's style tender coconut Ice cream is ready to serve.

Notes

1. I have used Amul whipping Cream here. You can use any brand whipping cream or non dairy whipping cream. 
2. If it's difficult to get the stiff peaks while whipping the cream due to hot climate you can put ice cubes below the mixing bowl.
3. For more of coconut flavour you may use same amount of coconut milk replacing coconut water along with coconut meat to make paste.

What is the shelf life of homemade coconut ice cream?

It’s stays good upto 15 days in freezer in an air tight container.

However, for the best flavor and texture, I would suggest to finish it within the 7 days.

Can this recipe of ice cream be made Vegan?

Yes! Why not. Just substitute the regular whipping cream with non dairy whipping cream and instead of condensed milk use Sugar.

The end results will be a slightly different but still delicious.
