1+ 1/4cuptender coconut meat, chopped (reserve 1/4 cup for adding later)
1/2cuptender coconut water
1+1/2Cup Whipping cream
3/4cupCondensed Milk
Instructions
Firstly to make this ice cream place the stand mixer blades and mixing bowl in the freezer for making whipping cream.
Then, blend chopped tender coconut meat (reserve 1/4 cup for adding on the later stage) and coconut water together in a mixer grinder to make smooth paste/puree. Keep it aside.
To whip cream, remove the bowl and blades from the freezer.
Pour chilled whipping cream to a bowl and whip till it forms stiff peaks.
Once done, add condensed milk and whisk again.
Now add prepared tender coconut meat -coconut water paste.
Mix with blender for a second to combine it well.
Pour the mixture in the rectangular or any mould, spread reserved chopped coconut meat, cover it tight with cling film.
Freeze it for minimum 8-9 hours or overnight.

Notes
1. I have used Amul whipping Cream here. You can use any brand whipping cream or non dairy whipping cream. 2. If it's difficult to get the stiff peaks while whipping the cream due to hot climate you can put ice cubes below the mixing bowl.3. For more of coconut flavour you may use same amount of coconut milk replacing coconut water along with coconut meat to make paste.
