Make sure to hang the curd so that excess water is drained out.
The another trick is to properly drain or squeeze the grated cucumber before mixing it into the hung yogurt.
Otherwise, cucumber waters down the sauce too much.
The only wait required to make this recipe is to let the tzatziki rest for few minutes in the fridge to chill, after you mix all ingredients together.

Ingredients
- 1 cup whole milk curd/yogurt
- ½ cup grated cucumber
- 1 tablespoon lemon juice
- ½ teaspoon extra-virgin olive oil
- 2 garlic clove grated
- ½ teaspoon sea salt
- 1-2 teaspoon chopped fresh dill leaves
Instructions
- Hang the curd in a cloth till all the water from it gets drained.
- Transfer this to a bowl.
- Place the grated cucumber on a towel and gently squeeze out a bit of the excess water.
- Now combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt and dill leaves.
- Chill until ready to use.
