White sauce pasta (Maida free) | How to make pasta in white sauce | White Sauce Pasta Recipe | Recipe of maida free white sauce pasta with step by step instructions

White sauce pasta is much loved dish across the globe and it’s kid’s favorite. Making white sauce that has no maida/maida free was a welcome change.

So let me reveal the secret ingredient, that I used to make this delicious white sauce pasta is Oats.

It was a pleasure to know from a dear friend Shailender Sharma, who shared this secret of making this pasta recipe few months ago.

I generally prepare red sauce pasta made with homemade Pizza pasta sauce, also known as Arrabbiata sauce

So I decided to give this white sauce pasta a try, and let me tell you, a non pasta eater like me, loved it and just gobbled the plate full of it.

Variety of Pasta

We love to have two varieties of pasta, the first one is classic, that is without the veges, and the other one is, mixed vegetables pasta.

We prefer later one as adding veges makes it a wholesome meal when served along with garlic bread.

Some vegetables that go well with this recipe are carrots, mushrooms, french beans, peppers (capsicum), sweet corn, broccoli, zucchini, cabbage and  baby corn. Here I have used onions, bell peppers and American corn.

Serve white sauce pasta as a snack or a light lunch/dinner.

 

Instructions to make White sauce pasta (Maida free) | How to make pasta in white sauce | White Sauce Pasta Recipe

Take water in a deep bottom pan and place it on stove on high flame. Once it starts boiling add salt, give it a good stir and add macaroni to it.

On a medium flame, let it boil for about 8-10 minutes. The macaroni should be boiled until al-dente (cooked but not very soft).

Strain the macaroni in a colander and separate it with fork with light strokes, to avoid them from sticking.

Meanwhile, melt the butter in a pan on a low flame and add onion to it. Sprinkle a generous pinch of salt and sauté it for 2-3 minutes then add the mix bell peppers.

On a high flame sauté bell peppers for few minutes then add the boiled corn kernels and cook it for a minute. Do not overcook, it shouldn’t loose it’s colour and texture . Once sautéed vegetables are ready, keep it aside.

Heat butter in a large pan on a low flame . Once it starts melting add oats powder and stir it continuously for around 2 minutes.
Cook it until it’s fragrant, but doesn’t changes its color and immediately add milk. Keep stirring continuously with whisk to avoid lump formation.

Now add salt to taste, black pepper powder, chilli flakes, mixed herbs and grated processed cheese. Stir the mixture and let cheese melt completely in the white sauce. Add cream cheese. In the last add tomato ketchup.

The cheesy white sauce is ready!

To this sauce, add the sautéed vegetables, basil leaves and boiled macaroni and mix it well. Cook it for 2-3 minutes.

Creamy cheesy White Sauce Pasta (maida free) is now ready to serve. Serve it hot and garnish with basil leaves.

NOTES :

You may use any type of pasta, here I have used macroni. It can be Penne, Fettuccine, Rigatoni, Linguine, Orzo, Fusilli, or Bow tie/ Farfalle.

Always add macroni to boiling water.

I never add oil once pasta is cooked as oil coats the pasta and that deters it to coat sauce you wish to add into.

Always use whisk to make sauce as it prevents the formation of lumps.

If you find the sauce is thick then add some more milk to it.

Never discard the pasta water, I always use this into making gravies.

You can use cheese slices instead of grated cheese. Moreover you may increase or decrease the amount of cheese as per your preference.

Ingredients

For boiling pasta

  • Macaroni- 1/2 cup
  • Salt- 1 tbsp
  • Water- for boiling the macaroni

To saute vegetables

  • Butter- 2 tablespoon
  • Onions finely chopped - 1/4 cup
  • Mix bell peppers- 1/2 cup
  • Sweet corn- 1/4 cup

For making white sauce

  • Butter- 2 tablespoons
  • Oats powder - 2 tablespoons
  • Milk - 1 cup
  • Salt- to taste
  • Processed cheese grated - 3/4 cup or more
  • Cream cheese - 1 small pack
  • Oregano - 1teaspoon
  • Red chilli flakes- 1 teaspoon
  • Black pepper powder- 1 teaspoon
  • Mixed herbs seasoning- 1 tbsp
  • Fresh Basil/Tulsi leaves- 3-4
  • Tomato ketchup - 1tsp

Instructions

      Hello Jody. I have shown the size of pack in my prep pics in the post itself. My bad, I should have checked the weight.

      It’s a smallest pack of Philadelphia cream cheese (of the butter pack, single serve size, we usually carry while traveling).
