Vegetable raita|Mixed vegetable raita is yummy, cool & refreshing curd based dish that can be made under 10 minutes flat. It’s full of nutritious vegetables and curd/yogurt.
It’s made by whisking curd and to this chopped vegetables are mixed along with some spices. Whilst it goes with any meal or season, the demand sours in summers. I had very recently shared Bathua raita recipe.

When you talk about making raita, my list is never complete without vegetable raita|mixed vegetable raita. It is one of the most loved and commonly made raita in indian households
Raita is one condiment that goes very well with indian cuisine, therefore it compliments the meal on all the 3 fronts i.e. nutrition, flavour and above all, taste.
A quick and easy recipe
Probably the simplest ever recipe on the blog so far, this easy & quick recipe has a special place in our heart. As our meal is never complete without raita or simple curds, i thought to share it.
Initially i was hesitant but our love for raita is undying, and it’s on our table frequently.
I love how versatile this raita is and it doesn’t take more than 10 minutes to whip up. Many times while cooking meals i instantly plan to make it.
However this recipe does not have any steps with regard to making it. Just quickly whisk the curd, chop or dice vegetables, mix this in whisked curd add some spices and you are done.
What vegetables go into making vegetable raita?
There is no set standard or recipe to make this raita. It completely depends upon your preference. We like to add cucumbers, tomatoes, carrots, onions and boiled potatoes.
Sometimes i do add some fresh seasonal fruits too. Therefore the choice of veggies can always be altered as per one’s choice.
Even the proportion of curd/yogurt for making raita is completely optional.
Increase or decrease it as per you wish. Last but not the least i always add either sugar,honey or jaggery to balance the flavours.
Serving suggestions
I serve vegetable raita with Papad Paratha, vegetable pulav, Chicken curry, Soyabean sabzi and just about everything.
In other words it makes for a wholesome, nutritious side dish and can be made in a jiffy.
This is vegetarian and gluten free raita and it can be made vegan by using non dairy yogurt.
Step by step instructions and pictorial presentation
Whisk the curd smooth and add salt, sugar, red chilli powder, roasted cumin powder and finely chopped green chillies. Set it aside.
After that peel and chop vegetables finely or dice it thin. Now add in the finely chopped veggies to the whisked curd. Mix it well. Taste the test and adjust the seasonings.
Chill in the refrigerator and serve.

- Chopped finely cucumbers, carrots, boiled potatoes - 1 cup
- Small onion chopped finely - 1
- Small tomato chopped finely -1
- Green chilli chopped finely - 1
- Curd/yogurt - 1.5 cups
- Salt/Pink salt as per taste
- Sugar/honey - 1 tsp
- Red chilli powder - ½ tsp
- Roasted cumin powder -1 tsp
- Chat masala - ½ tsp
- Fistful of chopped green coriander leaves & mint
- Whisk the curd smooth and add salt, sugar, red chilli powder, roasted cumin powder and finely chopped green chillies. Set it aside.
- Peel and chop vegetables finely or dice it thin.
- Now add in the finely chopped veggies to the whisked curd. Mix it well.
- Taste the test and adjust the seasonings.
- Chill in the refrigerator and serve.
