Vegetable raita|Mixed vegetable raita is yummy, cool & refreshing curd based dish that can be made under 10 minutes flat. It's full of nutritious vegetables and curd/yogurt.

Ingredients
  • Chopped finely cucumbers, carrots, boiled potatoes - 1 cup
  • Small onion chopped finely - 1
  • Small tomato chopped finely -1
  • Green chilli chopped finely - 1
  • Curd/yogurt - 1.5 cups
  • Salt/Pink salt as per taste
  • Sugar/honey - 1 tsp
  • Red chilli powder - ½ tsp
  • Roasted cumin powder -1 tsp
  • Chat masala - ½ tsp
  • Fistful of chopped green coriander leaves & mint
Instructions
  1. Whisk the curd smooth and add salt, sugar, red chilli powder, roasted cumin powder and finely chopped green chillies. Set it aside.
  2. Peel and chop vegetables finely or dice it thin.
  3. Now add in the finely chopped veggies to the whisked curd. Mix it well.
  4. Taste the test and adjust the seasonings.
  5. Chill in the refrigerator and serve.
