Ingredients

  • 4 250g potatoes boiled and peeled
  • 1 tablespoon oil for sautéing potatoes
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 green chili
  • 1 onion chopped finely
  • 1 tomato chopped
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon chaat masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • Handful Fresh Coriander leaves chopped
  • 1/2 Lemon juiced
  • 1 teaspoon salt or to taste
  • 10 bread slices white
  • oil for toasting the sandwiches

Instructions

  • To begin with peel the boiled potatoes. Lightly mash/chop the potatoes in small pieces but dont mash fully.
  • Meanwhile, in a pan heat oil. Add Mustard and cumin seeds. Once they splutter add minced green chillies.
  • Next add the finely chopped onions, chili and salt. Saute well until onions soften a bit. Then add chopped tomatoes and mix well.
  • Cover and cook for few minutes. Once tomatoes softened, it's time to add spices.
  • Add turmeric powder, red chilli powder, coriander powder, chaat masala/dry mango powder (aamchur powder) and garam masala.
  • Mix it well and it's time to add boiled & chopped potatoes.
  • Taste the masala and adjust the spices and salt accordingly. In the last, add lemon juice, garnish with chopped coriander leaves.
  • Switch off the flame and keep it aside to cool a bit.

To make Vegan Potato Sandwich (Aloo masala sandwich)

  • Preheat the toaster/grill.
  • Take two bread slices, I have used white bread. However, you may use any bread you wish to.
  • Spread the potato masala on one slice all over and cover it with another slice of bread.
  • Place this on hot toaster/grill. Apply oil on top of sandwich. Close the lid and wait for a couple of minutes to get golden crisp crust.
  • Flip the sandwich, brush little oil if required to grill it on top side. Once done, serve hot with Dhania pudina chutney or tomato ketchup

Notes

1. To make sandwich you may use whole wheat, sourdough or any kind of sandwich bread that you prefer.
2. Leftover day old bread works well too here to make sandwich as it crisps well after brushing oil for toasting/grilling.
3. This sandwich can be made on tawa/griddle also.
4. You can add cheese slice and toast them in butter if you are not vegan.
5. You can spread some green chutney on the inside before placing the potato stuffing, if you wish to serve them right away.
