For agar agar mixture
1tbsp8 grams Agar agar powder
1000mlWater
200gramsSugar
Fruits used
2cupsmix fruits
Apple
Kiwi
Pear
Pomegranate arils
Dragon fruit
Oranges
Black grapes
For Raspberry layer
1packJelly of 90 grams
500ml Water
Instructions
Making of layer of fruits
Clean, wash and chop 2 cups mix of fruits into small pieces. Here I have used Apple - Kiwi - Pear - Pomegranate arils - Dragon fruit - Oranges and Black grapes.
Keep your mold ready, you could use a 8” cake tin. I used 1 big and 1 small tin to make this fruit jelly cake.
To make agar agar mixture
Take a cooking pot, add cold water to it.
After that add 1 tbsp agar agar powder, and stir it very well.
Keep it on medium flame and using a whisk, stir continuously till the it comes to a rolling boil and add sugar to this.
Cook till sugar dissolves and switch off the flame.
Next pour 2 ladle full of this agar agar & sugar mix into the base of pan. Randomly spread mix of fruits over it.
Make sure all the fruits are placed strategically so that colors are visible through jelly.
Pour the remaining agar agar mix and set aside.
To make Raspberry jelly
Follow the instructions written on the pack to make jelly by heating water in a pan and pour the contents of raspberry jelly pack. Stir well to combine.
Thereafter pour this jelly slowly and gradually over the layer of fruits. Set this into fridge to chill for about 4 hours.
To un mold the jelly cake
First of all lightly push the edges of the jelly cake with the side of your palm from all over.
Thereafter, insert 4 toothpicks exactly the height of the pan, at 4 different spots at the sides of the dish.
The reason we do this is to create some air as the jelly gets sucked into the dish with no air, therefore making it difficult to come out of the dish.
So once you’ve inserted the toothpicks, place a plate over it. Now turn it upside down and slowly and gently transfer the cake onto a plate. Remove the toothpicks.
There you have a beautiful Jelly Fruit Cake ready to be devoured .

1. The variations and combinations for fruits are many, choose whatever is available fresh and seasonal.2. For jelly layer you can use strawberry, litchi or coconut flavor also.
