Spiced Whole Wheat Cookies | Atta Biscuits

Ingredients

  • 150 gms whole wheat flour
  • 1/2 tsp baking powder
  • A pinch of salt
  • 5 gms ginger powder
  • 5 gms cinnamon powder
  • 50 gms unsalted butter cubed
  • 75 gms brown sugar
  • 30 gms beaten curd/yogurt
  • 5-10 ml milk as required

Instructions

  • Preheat the oven to 180 degrees C. Line baking tray with parchment paper.
  • First gather all the ingredients and keep aside.
  • Cut the butter into small pieces.
  • Sift twice the whole wheat flour, ginger powder, cinnamon powder, baking powder and salt.
  • In the bowl add the flour mix to the cold butter, and make a breadcrumb like mixture by rubbing it it between your both hand fingers.
  • Mix in the sugar. Then add the beaten curd/yogurt, and mix well.
  • Now add required amount of milk to make a firm yet pliable dough.
  • Wrap the dough in a cling wrap and refrigerate for an hour. This process will firm up the dough and make it crisp when baking.
  • Once chilled, dust the surface with some flour and roll the cookie dough by placing lace mat over it.
  • After that using a cookie cutter cut them into circles of 1/4 inch thickness.
  • Arrange the cookies in a baking tray.
  • Bake for 15-18 minutes or until you notice the cookie turning crisp and smell done and edges start turning brown.
  • Once done, remove the cookies from the oven and allow them to cool on a wire rack. Once cooled, store the cookies in an airtight container for about 2 weeks.
