Instructions
For Potato stuffing
Let's begin with making potato stuffing first. For that, dry roast coriander seeds, cumin seeds and fennel seeds in a pan.
Coarsely grind it and keep it aside.
Boil the peas
Meanwhile, boil the fresh green peas by adding some salt.
Once done drain and keep aside.
Make masala
After that, heat oil in a pan, add cumin seeds. Once it splutter add chopped onion.
Once it turns translucent add minced ginger- chillies. Sauté everything until onions turn golden brown.
To this, add boiled peas, coriander-cumin- fennel seed powder. Next add boiled, mashed potatoes. After that add red chili powder, salt, turmeric, amchur powder and a pinch of garam masala. Mix the spices well.
Mix everything nicely so that spices coat well to it.
Taste and adjust salt, cook for 2-3 minutes more. Finish with a dash of lemon juice. In the last, garnish with freshly chopped coriander leaves.
Let it cool down to room temperature.
To make Samosa Puff pastry
Thaw the puff pastry sheets for about 45 minutes on the kitchen counter. Once it comes to a normal temperature its ready to use.
Cut the puff pastry into roughly 4×4 inch squares. Mine were already cut into squares so I didn't.
Fill each center of the squares with around 2 tbsp of potato mix. Now fold each stuffed puff pastry square in half to make a triangle.
Using a fork, carefully crimp and seal the edges. No need to use the water. Meanwhile, pre heat your Air fryer for 3 minutes @180°C.
Place the ready puff pastry samosas in a plate, apply Milk with help of brush, sprinkle black sesame seeds.
Air frying of Samosa
After that, transfer these onto Air fryer basket in batches, placing a few samosas at a time lined with baking paper. Brush the top and bottom of Samosa with vegetable oil.
Bake them @180°C for 4-5 minutes, then turn them over and cook them @200°C for another 2 to 3 minutes on the other side until they are golden brown all over. Repeat until all of the samosas are cooked.
Notes
1. Make sure to brush from all the sides of the pastry samosas liberally with oil because this will prevent them from drying out.2. I have baked the samosa at 180°C until they’re 80% done and then increase the temperature to 200°C to to achieve the golden colour.3. I prefer not to over crowd my Air Fryer basket so i make sure to cook samosas in small batches.
