2medium sizeBananasRipe
1/2TspCardamom Powder
1tbspFennel seeds
2TbspCoconutgrated
1cupWheat Flour
2TbspRice Flour

Instructions
To begin with, heat a pan, add jaggery and enough water to melt. Cool it to use later on.
Take a ripened banana in a bowl. Mash it well with a fork. To this, add grated coconut and fennel seeds. Keep it aside.
Once cooled add this jaggery water to mashed bananas.
Now add wheat flour and rice flour. Mix everything well to make a batter. The consistency of batter should be thick but flowy like brownies batter.
Rest the batter for good 10-15 minutes. Meanwhile heat the appe pan. Grease each cavity with oil. Lower the heat.
Next, add baking soda to the batter and whisk well.
With the help of a small spoon, pour batter in every cavity till half as this will rise and may spill out.
Cook this covered on low heat for 3 to 4 minutes. Time to turn them upside down to get cooked from other side.
Once they turn light golden brown from both the sides, take them out.
Don't overcook as they might turn chewy. Once done, dish them out on a plate and serve hot.
Enjoy.
Notes
1. You may add sugar as a sweetener replacing jaggery.2. If you wish to make this recipe batter in advance, just store this in the fridge. Add baking soda once you are ready to cook them.3. No appe pan, no worries. Deep fry them in hot oil as fritters.4. You may replace rice flour with fine variety of semolina.
