Baked Sweet Potato (Air fryer method) is a quick way to make a delicious side dish that is vegan and gluten-free, with a minimal effort.
It comes together in around 20 minutes with just few handy ingredients to get that soft and fluffy center with a crispy skin.

Instructions
Thoroughly wash the whole sweet potatoes. Pat them dry with a kitchen towel. Then, poke several holes with the help of fork.
This step helps the steam to escape and prevents the potatoes from bursting in the air fryer.
Brush the sweet potatoes with olive oil and sprinkle some salt. Keep it aside.
Preheat your air fryer to 180°C for 3 minutes. Place the sweet potatoes in the air fryer basket.
Air fry for 18-20 minutes, until they’re fork tender, flipping it halfway through.
When it’s done, remove them, slit them at the center. Enjoy this as it is.
Or
You may garnish it (purely optional) with Roasted walnuts or pistachios, pink salt, coriander leaves and a dash of red chilli powder. Sprinkle some lime juice and dig in.
