Ingredients

  • 1 cup mashed bananas preferably ripen ones
  • ½ cup creamy peanut butter
  • 1 tbsp maple syrup
  • 2 cups old fashioned oats
  • cup dark chocolate chips

Instructions

  • First, preheat oven to 180° C. Line a baking tray with parchment paper.
  • To make cookies, add mashed bananas to a large mixing bowl. To this add peanut butter, maple syrup and oats. Top it with chocolate chips and gently stir it to combine.
  • Mix well to make a dough. Use ice cream scoop to drop balls of cookie dough onto lined tray.
  • Use fingers to press down on each cookie to flatten it a bit. They should be about 1/2 inch thick.
  • After that, bake for around 10-12  minutes or until edges are golden brown.
  • Finally, remove from oven. Cool on tray for 5 minutes before carefully moving to a cooling rack.

Notes

1. Use ripe bananas for the best texture and flavor.
2. Creamy peanut butter is the key to yield a gooey and chewy cookie.
3. Before baking press down the cookie dough balls as these cookies do not spread.
So whichever shape they enter the oven is the final shape they'll achieve.
4. So not over bake these cookies. Bake until cookies are just set in the middle.
