Sooji paniyaram recipe | Instant Rava Appe Recipe | Instant rava kuzhi paniyaram is a perfect, instant, quick and a healthy breakfast recipe made with sooji/semolina/rava, curd and colorful vegetables.

Ingredients

  • 1 cup sooji/semolina roasted
  • 1/2 cup sour curds
  • Salt to taste
  • 1 small onion
  • 1 carrot
  • 1 capsicum small
  • 1/4 cup Corn kernels boiled or steamed
  • 1/2 inch ginger grated
  • 1 green chilli minced or finely chopped
  • 2 tsp fresh coriander leaves
  • 1 Eno sachet Blue pack or a pinch of baking soda
  • 2 tsp oil for roasting and greasing appam mould

Instructions

  • Firstly, in a large mixing bowl combine sooji/rava/semolina, curd and salt.
  • Mix it well to form a thick batter  without forming any lumps.
  • If required, further add ½ cup water. Keep aside.
  • Rest for 20 minutes or untill rava absorbs water.
  • Furthermore add chopped onion, carrots, capsicum, corn kernels, ginger, green chilies and some fresh coriander leaves.
  • Add water if required as the batter  consistency should be like idly batter.
  • Heat paniyaram pan / guliyappa pan / appe pan, add add few drops of oil inside each cavity.
  • Furthermore add Eno into sooji batter (just before preparing appe) and combine well.
  • Now fill cavity with a tbsp of sooji batter in each.
  • Cover and simmer for a minute or untill appe gets cooked slightly.
  • Once the downside turns golden, flip it over to the other side using a wooden stick.
  • Simmer further and cook on low heat until it turns golden brown.
  • Finally, serve instant rava paniyaram with Green chutney, Tomato sauce or Coconut chutney.

Notes

1. I prefer to use lightly roasted rava for this recipe. I have shared the link on how to preserve sooji in the beginning of the post.
2. The appe batter comes together with the addition of curd. You may use sour or fresh curds as per your choice.
3. A sachet of Eno or pinch of baking soda is all it needs to make fluffy paniyarams.
4. You can add any vegetable of your choice to the batter and make it more nutritious!
