Ingredients

Measuring cups used, 1 cup = 250 ml

    Dry ingredients

    • All purpose flour 1.5 cups
    • Baking soda 1 tsp
    • Baking powder 1 tsp
    • 1/4 teaspoon salt

    Wet ingredients

    • Bananas mashed 2-3 around 1 cup
    • Brown sugar 3/4 cup I used light brown sugar
    • Vanilla extract 1 tsp
    • Oil 1/3 cup I used canola oil
    • Coconut Milk 1/2 cup
    • Walnuts chopped 1/2 cup

    Instructions

    • Pre-heat oven to 180 ° C. Brush a 10 x 5 inch loaf pan with oil, dust some flour and lay a parchment paper at the bottom of pan.
    • In a bowl sift together flour, baking soda, baking powder and salt at least 3 times. Set aside.
    • In another bowl, mash the bananas using a masher or a fork. You should have around 1 cup mashed banana.
    • Add the sugar to the mashed banana and mix using a whisk until combined.
    • Then add the vanilla, oil and mix.
    • Start adding the flour mix in batches.
    • Then add coconut milk. Check the batter consistency. You can add additional tablespoon of milk if the batter looks too thick.
    • Do not over-mix the batter. Coat the walnuts with flour so that it would not sink in the batter while baking.
    • Add in flour coated walnuts and fold them into the batter using a spatula.
    • Pour batter into the prepared loaf pan. Sprinkle some chopped walnuts all over.
    • Bake at 180 degrees for about 50 to 55 minutes until a toothpick inserted in the center of the bread comes out clean.
    • Every oven is different so the temperature may vary.  Keep an eye on the bread after 45 minutes.
    • Cover the bread with an aluminium foil after 30 minutes to prevent excessive browning on the top.
    • Remove it on wire rack to cool down completely. Slice and enjoy this delicious banana bread in breakfast or as a snack.
